A friend at work clipped this recipe out for me, it’s from the Baltimore Sun – Peanut Pumpkin Bread. Pumpkin AND Peanut Butter??!?!?! This must be a dream. I made some modifications to make it healthier and cut the recipe in half. Here is my version…
(The chocolate pb cup on the right side of the loaf notes which side I added chips too.)
1/2c peanut butter
1/2c apple sauce
1/4c soy milk
1 1/2c whole wheat flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp pumpkin spice
Directions: Mix the first four ingredients in one bowl and the rest of them in another. Then, combine – don’t over mix. Pour into a loaf pan sprayed with non-stick spray. I added mini-pb cups into half the batter (choc chips would also work). The addition of the mini-pb cups really made it delicious.
I topped it with some butter and a tad of brown sugar. It tastes more like Peanut butter bread than Pumpkin, but it’s good
