Take a Snow Walk

Church was a fail! When Ben and I pulled up the parking lot was empty!? We're not registered members of this church so I'm sure they let people know somehow, but we were very surprised! Despite the cold, it is very sunny today so we decided to take a walk. Ben and I strolled around for about an hour. It's very pretty out, with everything dusted white (but it's not growing on … [Read more...]

Pancakes and Almond Butter

I had been craving pancakes since yesterday so I knew exactly what was on the menu this morning as soon as I woke up! In my pancake mix: 1/2c egg beaters, 1/3c oat bran, salt, vanilla, chia seeds, cinnamon, dash of seltzer and stevia. I added sliced bananas to the batter after I poured it in the pan (you can see them on the under side). It made two dee-lish 'cakes! I topped … [Read more...]

Cheat Day Saturday

Ben has been working out more and did a good workout today so he suggested pizza and wings for dinner. Far be it for me to turn down pizza so I agreed :) But - we decided that Saturday will be our "Cheat Day" but the rest of the week we will stick to our healthy eating plan. Since he was more about the wings than the pizza, he was fine with us splitting a veggie pizza. Yes! … [Read more...]

Snow and Steady

This morning the forecast predicted snow, but I really really wanted to run outside. I love the outdoors and am so sick of having to stay inside :( I put on layers and layers of clothes and went out to brave the cold. My knee started hurting around mile four and then it started to snow. So, I turned around and headed back home. I did 7 miles total - they were very slow, I … [Read more...]

Use Your Noodle

I have been craving peanut noodles for a while now, but keep forgetting to make it. Tonight I remembered and roasted up some broccoli to go with it. Yum! In the afternoon I had some carrots with hummus and cereal with milk. I also ate part of a muffin (while standing, no pic)... The Beck Diet - Let me clarify for those who aren't familiar - The Beck Diet Solution Workbook is … [Read more...]

The “C” Word

Who else would title a post "The C Word" and put a picture of her self under it? I know. Thanks for reading. But, I'm not talking about the C word you're probably thinking of, I'm talking about the COLD! It is painfully cold, as in if the air outside touches your skin, it burns. Ouch! I don't know if you've caught on during my 7,451 previous rants about MD, but I do not enjoy … [Read more...]

Orange Foods – Pumpkin Oats

My mom said when I was little I used to love all orange foods...sweet potatoes, carrots and pumpkin! Well, I haven't changed at all in this aspect! Too bad my mom didn't know about pumpkin oats when I was a kid - I would have gobbled it up! In the bowl: 1/3c oats, water, soy milk, vanilla, stevia, pumpkin pie spice, pumpkin and chia seeds. I added some brown sugar after the … [Read more...]

Soy Chorizo for dinner

Normally I think of chorizo as a breakfast food, but today it was for dinner. I love that there is soy chorizo so I can still enjoy this yummy meal without having to eat the most random parts of animals :( I cooked it up with some eggs and had roasted broccoli on the side. I love eating Mexican food by tearing off pieces of tortilla and grabbing a piece of food. I often … [Read more...]

My Next Race and More Answers

National Marathon Header

Since the Disney Marathon I have been itching to plan my next race. I'm signed up for the Surf City Half, but that's going to be more for fun since I'm still recovering from the full. Then, I got an email for a discount code for the Suntrust National Marathon and Half March 20th. It must be a sign, so I'm going to go for it! I'll be doing the half marathon since my knee … [Read more...]

Fitness Assessment

This morning I had an appointment at the gym for a fitness assessment. Before I left I ran 3 miles on the treadmill at my apartment's gym. My knee is still bothering me :( I made a quick smoothie to drink on the way - it had spinach, protein powder, ice, water, chia seeds and a splash of juice. The assessment went okay. I have a lot of work to do to get to my goals … [Read more...]

Sushi and Trader Joes

After my massage I went to Trader Joes and came out with two new finds. I think this first one is going to make you jealous... Crunchy Salted Almond Butter with Flax Seed. This may change my life. I had half of one of these muffins on the way home. :) I was craving sushi and Ben thought it was a good idea so we met for dinner. I started with miso soup. Why are Japanese … [Read more...]

How I Met Ben and Lunch

monica and ben grand can

I thought it was weird that even though I ate a huge bowl of oatmeal around 10:30am,  I was hungry for lunch at 11:30am?! Then, I realized it's because I ate breakfast so late that I was hungry again. I had been up since before 6:30am, ran 5.8 miles and didn't eat a full meal until 10:30am = a very messed up blood sugar. Even though I had just ate I listened to my body and … [Read more...]

Running Vest and Chickpea Casserole

This morning I added another layer to my running gear - a vest! This isn't actually meant to be a "running" vest per se, but I needed something else to keep me warm without making me overheat. It worked perfectly! Before I left for my run I ate a small bowl of cereal. I knew I would be stalling for a bit while it got a little warmer out :) I did 5.85 miles in 52:37 My … [Read more...]

Questions, Comments…

Me and Michael

My seventh grade science teacher would always say, "Questions? Comments? Complaints keep to yourself." Ha, I love saying that now. I am totally digging all these questions from my anonymous question form. I'm going break up my answers in different posts because I don't want it to get too boring... Question: How do you remain so positive? Monica: Ouch, are you trying … [Read more...]

My Diet Book

*Note - some of the answers to your anonymous questions are in this post. But more formal answers for the rest of the questions are to come. It's only day two of the meal plan I set up for myself this week and I already realized it's not working. I usually aim for 1,800 calories when I am trying to lose weight. My activity level is enough that this is a good calorie level … [Read more...]

Burnt Toast

I like my toast (and brussel sprouts) burnt, but today I went a little far with it! It's okay I still ate  and enjoyed it :) I made cinnamon sugar toast and had an egg fluff on the side for protein. I also munched on some blubes while making coffee and burning the toast. I used half an english muffin and a piece of ww Tuscan pane. These different and very burnt breads make my … [Read more...]
