For this installment of Mexican Meatless Monday I wanted to do a Mexican take on one of my favorite foods – Pizza! Pizza actually might be my all time favorite food and I love trying new kinds.
For this version I used a whole wheat pita as the “crust” and leftover refried beans as the “sauce”. Then I topped that with a little bit of salsa. I was very generous with the beans since I love them and they’re a good source of protein and iron 🙂 Pile those beans on!
I used Jalapeno Cheddar Cheese…for some reason the cheese didn’t melt very well. This wasn’t a light version of cheese, maybe it was just wasn’t meant for melting or too fake?
I had carrots and hummus on the side, and some extra hot sauce for dipping. I made two pizzas and it was really hard to stop and just eat one. I’m already looking forward to eating his buddy.
