Mexican Meatless Monday – Mexican Pizza

For this installment of Mexican Meatless Monday I wanted to do a Mexican take on one of my favorite foods – Pizza! Pizza actually might be my all time favorite food and I love trying new kinds. IMG_4544

For this version I used a whole wheat pita as the “crust” and leftover refried beans as the “sauce”. Then I topped that with a little bit of salsa. I was very generous with the beans since I love them and they’re a good source of protein and iron :) Pile those beans on!IMG_4542

I used Jalapeno Cheddar Cheese…for some reason the cheese didn’t melt very well. This wasn’t a light version of cheese, maybe it was just wasn’t meant for melting or too fake?IMG_4146 I had carrots and hummus on the side, and some extra hot sauce for dipping. I made two pizzas and it was really hard to stop and just eat one. I’m already looking forward to eating his buddy.IMG_4550

aah tasty looking! Since reading all these blogs, for the first time EVER I went to look at pizzas in the supermarket today! I’m thinking of getting one quite soon…it’s been YEARS since I had one – the last one I had was so doughy and gross it put me off for life :s plus I hate cheddar :P

Yum, we love mexican pizza. I’ve made a “taco” pizza before using refried beans, enchilada sauce (my husband doesn’t like salsa) and cheese. After baking, you top the slices with shredded lettuce, tomatoes, olives, sour cream, salsa…whatever your favorite taco toppings are. I am not a fan of avocado, but I’m sure that would be an excellent topper as well. It’s a nice contrast between the hot pizza and the cool toppings.

Allison, that sound dee-lish! I love avocado and would have totally used some if I had it! But, for some reason not the biggest fan of sour cream?

Anna – the pitas are from Costco and are great! The brand is Damascus Bakeries.

Ah looove pizza! I’m a huge pizza sauce fan though – I don’t know if I could give that up! I wonder if it would taste good to put tofu as a topping to get some protein?

Yum! I think you’ve inspired me to get pitas at the grocery store!

Your sauce looks so delicious. I might just try this version of pizza soon. I love pizza and I love Mexican food. They sound like a good combination.
