Mexican Meatless Monday – Black Bean Quesadillas

Hola! Bienvenido a Mexican Meatless Monday!

The other day I said I was a firework as the reason for my athletic achievements, but today I’m convinced it’s because I’m Mexican.

Cain Velasquez proved it really is the “size of the fight in the dog” this weekend becoming the first Mexican-American to win the UFC heavy weight title. You can see a clip on YouTube here.

Okay back to dinner…

First I sautéed onions, bell peppers and mushrooms until soft. Then, I added taco seasoning and a can of black beans.IMG_2690

This filling would work great for fajitas too!

I piled in a ton of black beans, veggies and cheese into a tortilla and cooked it up until crisp on the outside and the cheese was melted.

IMG_2692 The secret to an evenly cooked and crispy tortilla is to put a pan on the top half of the quesadilla while it’s cooking.

I served it with salad and salsa.

This is the other jar of salsa I got as part of the Foodbuzz Tastemaker program. Maybe I should be a real Mexican and make my own salsa. But, I don’t think that’s going to happen anytime soon. IMG_2701

It’s been too long since I’ve had a quesadilla!

Snacks for school: Cabot Creamery sent me these cheese squares to try. Only 50 calories and 6 grams of protein – that’s a good deal :)   I hate when “light” cheese tastes light and this one doesn’t.

IMG_2688 Lunch was an egg scramble with leeks, spinach and cheese. This is definitely on my top 5 new obsessions list.

And a pear for dessert. This was perfectly ripe and super flavorful. I normally hate fruit that you have to wait for (to get ripe) so I avoid buying them. But, this came with the CSA and I’m glad :)

While there I picked up a treat for Ben: Macaroon Cookie dipped in Chocolate. I’m not a big fan of coconut, but this sucker looks amazing.IMG_2703 See ya in the morning :)

hmm i havent had a quesadilla in a long time! i must eat one soon! :) ha ha im mexican and will probably never make my own salsa. why should i? my mom is always willing to give me a boat load!!!

Your quesadilla looks so good! Why make your own salsa when pace picante is so good! I am way too lazy to make my own salsa. Good job waiting to eat the pear…. I can never wait long enough and I end up eating them way before they are ready!

I had some leftover tomatoes the other day and did make my own salsa … (tomato, onion, garlic, peppers all roasted int he oven) and boy did it turn out great.. Maybe because I made it myself, but I do recommend trying to make your own for a change. (especially to rid of some sub-par tomatoes)

Also, I made burritos yesterday .. when I was thinking about what to make I did remember your Mexican Meatless Monday (although I didn’t go meatless), so there… influencing peoples dinner all over the world.

yeah well… I just discovered today that yesterday was world pasta day, so Mexican wasn’t the best option after all :D

(still loved my “dos burritos” though.)

That cookie looks really good. I actually like jarred salsa better than fresh, TJ’s spicy peach is my favorite.

Haha LOVE the shirt idea. Even though I’m not Mexican, I kinda feel like I should be. I think my stomach may have been Mexican in another life. Oh and I have a Chihuahua so that counts too! ;)

Yum, that quesadilla looks great!
I’m not Mexican, but I’m Italian and while I wouldn’t necessarily consider myself a firecracker, the hot-headed Italian gene rears its ugly head every now and then. Except I don’t flip tables at restaurants. :)

Did you see the Lesnar/Velasquez fight? O.M.G.!!! AMAZING. Cain seriously rocked that fight.

I don’t like coconut either, but I bought some chocolate-coconut macaroons at Whole Foods (bc they were gluten free and cheap) and they were phenomenal! I actually don’t really love chocolate either, but the combination was perfect.

We make black bean quesadillas a lot. They are excellent “quickie” dinners. And black beans are sooo filling!
