Mid-morning I snacked on a red pear. The guy at Trader Joes watched me poke at them for 10 minutes before telling me, “They’re supposed to be firm.” I replied, “Yeah they are…” and held up two pears in an inappropriate manner.

This weekend my mom and I were contemplating what to make for Easter. She really wanted ham, but we were at a loss about what to make with it.

Normally we pair everything with beans (Mexican requirement) and potato salad (love me some tater salad!).

When my mom suggested scalloped potatoes I was surprised, but game. We have never made scalloped potatoes before. Heck, I don’t think I’ve ever had them before! one potato two potato Healthy Scalloped Potatoes with Greek Yogurt

So, I put myself in charge of creating a healthy recipe for scalloped potatoes. After some internet research I gathered my ideas and did my own thing. This version used greek yogurt instead of sour cream.IMG 9618 800x533 thumb Healthy Scalloped Potatoes with Greek Yogurt

Healthy Scalloped Potatoes Recipe

Ingredients:

  • 3 pounds potatoes – peeled and sliced ( 8 medium)
  • 1 cup plain greek yogurt
  • 1 1/2 cans of 98% Fat free Cream of Mushroom soup
  • 1/2 cup low fat milk (add more as needed)
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder

Directions:

Preheat oven to 350 degrees.

Mix all ingredients except potatoes and cheese in a bowl

Spread 1/3 of the yogurt mixture on the potatoes. Add 1/3 of the cheese.IMG 9591 800x533 thumb Healthy Scalloped Potatoes with Greek Yogurt

Repeat layers – mine made about 3. Top with cheese.

    Never had scalloped potatoes before?! That’s a shame. It’s also pretty popular where I’m from (the far upper midwest) to top them with smashed up potato chips. YUM.

    Ah! I just went to the zoo on Sunday and saw a couple of those red pandas! They’re so cute! I would have tried to smuggle one home, But my purse was stuffed with coins and old movie stubs. Fail

    that recipe sounds great! i make my scalloped potatoes with a milk/cream/flour mixture, and they always come out nice.

    I like the greek yogurt idea, but I wonder what you can substitute for the cream of celery soup that is more natural? Hmm, I might have to try that recipe.

    Did you know that Yukon gold potatoes are the healthiest white potato you can eat? If I remember correctly, it’s because they are lower on the glycemic index. I tried to healthify corn casserole once, using greek yogurt. It didn’t turn out so well. : /

    Ham and scalloped potatoes are such a perfect match. I remember my mom making the boxed scalloped potatoes growing up and I actually LOVED them. Something about powdered cheese and dehydrated potatoes always tasted amazing.

    Hi Monica! I need to start getting up earlier, too, because it’s starting to get warm here in AZ; and will start getting hella hot by 10am soon! I wish I was more of a morning person, though…how do you motivate yourself to get up so early to run? I LOVE running, but i LOOVVEEE sleeping :-). Getting up early has always been the hardest thing for me, and still remains a mystery to me after all these years…any tips? :-)

      I make sure I go to bed at a good time. I am someone who needs at least 7 hours of sleep to function, so I make sure I’m hitting the pillow early enough for my wake up call. We’ll talk about this today!
