Today’s Meatless Monday recipe is actually a Meatless Monday Marathon Meal (say that 26 times fast)!

This recipe is from my New York Marathon / Redbook Test kitchen adventure – Black Bean and Corn Tostadas with Avocado.

So random considering I don’t ACTUALLY know you, but after following your blog for a few years I’ll randomly see things and think “I bet Monica would like that”…pretty creepy when you actually think about it hahaha. Anyway, I saw this post and immediately thought of you…

Love the videos! Between the two I like to order corn tortillas out, but prefer flour at home. Weird?

Love Oikos yogurt…I top it with everything…choc. chips, fruit, nuts, and a little sunbutter too…yum!
