20 Minute Dinner Recipe – Brown Rice Salad with Peanut Sauce

Before I forget – I wanted to share this healthy vegetarian, gluten free, happy happy recipe for Brown Rice Salad. I made it the other night and can’t wait to recreate it. Brown Rice Salad with Peanut Sauce

Ingredients:

2 packages microwave brown rice (or the quick cook kind)

1 can beans of your choice – except jelly beans

1 can green peas

1 package Asian slaw mix

1/2 cup peanuts

1 cup peanut dressing – I used that Tamari *Gluten Free sauce below

Sriracha – optional, kinda.

Directions: Make brown rice according to package directions. Mix all ingredients. Season with salt and pepper to taste. Let set an hour or more (you can make this the day before and stir before serving).

BONUS: The next day I cooked it up with eggs and extra coconut aminos (like soy sauce) to make a brown rice stir-fry! *Note: soy sauce has gluten, so use a substitute if needed.
