Lentils and Rice

Dinner

17 Mar

Today I was working with: lentils, rice, tomato paste and stewed tomatoes. I considered making the Lentil Loaf I made a year ago (blogs are so cool in how you can keep track of that stuff!).

But, I decided to wing it instead of using a recipe. I figured I would cook the lentils, mix them up with tomato sauce and put it over the brown rice.IMG_6303

After cooking the lentils I set them aside.  I sautéed onions and garlic. Then added tomato paste, stewed tomatoes and a bunch of random seasonings including: S&P, mustard, bbq sauce, chili powder and chili sauce.

I topped it with a little cheese and Wa-La! It’s dinner. IMG_6304

And since I was getting all nostalgic about old recipes I also made No Bake Chocolate Oat cookies. This time I made them into balls and rolled them in coconut.

Actually, it wasn’t nostalgia at all – Ben requested I make these. He rarely asks for desserts or me to bake/make anything sweet, so I was all over it! IMG_6307

See ya in the morning 🙂

That looks great to me. I would be asking you for those every night probably. haha. My husband also does not ask for desserts often, so when he does, I make them too.

I can’t believe those cookies only use 4 ingredients!!! I’m making them ASAP. In other words: I like your balls, Monica.

The lentils and the cookies both look delicious! I agree that having a blog record of recipes is really handy. I’ve referred to my own several times.

Chocolate and No-bake : three words I’m going to be incorporating in my near future! Thanks for the idea, lady!
