What If Wednesday and Big Bowls

Today I opened the fridge for lunch and saw a bunch of random food filled tupperware staring back at me. The containers had peas, chickpeas and brown rice. Hmmmm…. I racked my brain for a cool casserole or inventive hot salad idea in which to use all these ingredients at once. Then I realized that I love chickpeas straight up. I didn’t want them buried in some casserole. … [Read more...]

Wake Up Wednesday

Hello! I woke up with grand plans for yoga, but Ben needed to use the car, so that was a no-go. Most of the time having one car is perfectly fine, but every now and then it throws a wrench in one of our plans. Boo. Instead of yoga I took a walk with one of my books. But, I ended up mostly ignoring it and getting l0st in my thoughts. After my walk I made the same breakfast as … [Read more...]

A Tale Of Two Tastebuds

This morning I assembled a delicious yogurt bowl for breakfast. In the mix: pumpkin (which I warm up in the microwave), yogurt, stevia, pumpkin pie spice, chia seeds and cereals. Served with a spoonful of PB. After taking pictures, I mix it all up and dig in! There is a reason it’s called a yogurt mess. It looks gross, but tastes delicious. After mixing I went put some … [Read more...]

Right In Front Of Me

Last night I stumbled home in a post-marathon stupor and put my race bib on the fridge. It wasn’t until this morning that I saw the magnet I used - “Have faith in yourself and in the future.” Sometimes there are positive messages right in front of us that we need to be open to. I try to surround myself with motivational things, but it doesn’t help if I’m not open to it! I … [Read more...]

Zero Week – Post Marathon Recovery

I ran a marathon yesterday. I know you might already be aware, but I just needed to say that out loud. Or rather, write it on my blog. I woke up today feeling sore, which is obviously expected. My knees and quads hurt when I go from sitting to standing or vice versa. And I’m pretty sure at least one of my toe nails is a goner. Now it is Zero Week – the week after a … [Read more...]

Four Minutes Away

I didn’t post yesterday because I didn’t have it in me. This whole week I’ve been stressing over the race to a ridiculous degree. Truth be told, after reading race recaps over the last week I wasn’t pumped up – I was doubtful of my abilities, my training and my readiness to hit my goals. All week I tried to get my head in the race. I wrote a post about it. I reached out to … [Read more...]

Always Carb Loading

Last night Ben asked me if I had started carb loading yet. My response, “What?! I never stopped after my last race...in January.” The fact that carb loading is only for races should have been specified in the runner’s manual or something. Someone should have told me this! Today I carb loaded with grapes straight out of the fridge. And some watermelon. I made a random egg … [Read more...]

Last Friday 5K Before The Big Day

Hello and welcome to Friday! I woke up thinking it was Sunday and I was late for the race, so I am extra happy it’s only Friday :) I did an easy 5K to get my legs moving and some ab work. I definitely want to work on strengthening my abs because I get majorly poor form when I’m fatigued during a run. But, that is another post for another day. After my run I made breakfast … [Read more...]

Confession Thursday – I like it Dirty

Confession Time. Warning: I like it dirty. Confession#1: 9 times out of 10 I don’t wash my fruit. Today I washed my grapes and proceeded to drop the whole clean bowl of them on the floor. Now I had to wash them twice!  I think this is the universe’s way of telling me to stick with my “Dirty grapes are okay policy”. #2: It’s almost like I go out of my way to not match … [Read more...]

What’s Eating You?

Morning! I actually had a horrible night’s sleep. I woke up at 4am, my thoughts racing about 100 different things and could not go back to sleep. I tossed and turned until it was time to wake up and now my eyes sting from lack of being closes long enough. I decided to opt out of a morning run because I was so tired. I may try to go on a 2 miler to loosen up in a bit. … [Read more...]

Burgers With Ben

On the way home tonight Ben asked what I was thinking for dinner. I had grand plans to make a tofu stir-fry, but he didn’t look too thrilled when I mentioned it. It really was a trick question because he was already planning in suggesting a drive through burger joint. I am always down for some stolen fries and onion rings, so I was down for it. Thanks, Natalie Dee. I hope … [Read more...]

Training Your Mind

I’ve been training for this weekend’s marathon for three months. Some runs were good, some were bad. I skipped some because of travels. I rocked some because I felt great. I regret that I failed to complete any legitimate speed work even though I wrote it into my plan. But what’s done is done. All the miles and training (or lack thereof) are behind me now. I have 4 days … [Read more...]

White Beans

I love colorful foods so I was hesitate to buy these white beans at the bulk bins today. I needed beans, but these guys weren’t jumping out at me. Hmmmm. I was on the fence the whole way through. But, I was able to just walk away from them since I cooked them in the crockpot instead of on the stove. Three and a half hours on high later – they were splitting apart. That’s … [Read more...]

How Do You Commit To Fit? Contest!

Hello and Happy Tuesday! I started the day with a quick 3 miler. I’m really starting to get antsy about the race, but not in a good way. My stomach is already in knots! After the run I made oat bran for breakfast. I received a lot of questions about oat bran so here’s the low down. Oat bran: is just the outer husk of the oat – and has a lot of fiber (it’s called “bran” … [Read more...]

Cranberry Roasted Turnips, Sweet Potatoes and Apples

Thank you all for the help on Naming My Veggies! It was seriously a huge help in being able to at least name my new food! After finding out what my loot was named I went in search of recipes. I loved the sound of the recipes you sent, but already found this one for the turnips and was sold. Tonight’s dinner recipe was inspired by this recipe I found on My Recipes.com. I … [Read more...]

Mexican Meatless Monday – Instant Soup

Most of the time I prefer lunch to be super quick and easy. I don’t have an hour in the middle of the day to cook up a time consuming meal. And I doubt you do either. Today I have a dinner recipe planned that is not Mexican so I wanted to celebrate Mexican Meatless Monday at lunch.  I considered driving through Taco Bell for my fave Bean Burrito, but knew Mamapea would … [Read more...]
