Tofu Curry Tuesday

I left my camera card at work last night so I wasn’t able to show how I made my Tofu Curry. It’s super easy, so I thought I’d share…

First, I squeezed the tofu out overnight…

For those that don’t know – just put it under some heavy things with paper towels to soak up excess water.

The next morning I chopped it up and threw it in the crockpot with the curry sauce and peas.

I used TJ’s Curry Simmer Sauce

Mixed it all up and turned it on high…

Then, I went for a run 🙂

On my run I realized I couldn’t compete with all the fancy foodies, so I decided to do my own thing. Voting is open, you can check it out here – “Oh, You Fancy Huh”

But, I was able to enjoy some post run and again last night 🙂

This morning I did Jillian’s 30 Day Shred Level 1. I’ve really dropped the ball on this, but am planning on doing it again on Thursday to make it 2x this week per my end of year resolutions.

Then, I made the quickest breakfast I could – a yogurt bowl of goodness. I am always late to class on Tuesday, even with this speedy meal! I hate to admit that I might need to wake up earlier. Boo.

It didn’t help that I neglected to pack lunch until this morning. Fail

It Okay, I’ve gotta go. I’m already  late for my next half of the day =work.

      Every time I have tried to drain tofu it seems to become a pile of mush. I’m baffled by how everyone else can seem to stack a ton of weight on it and have it turn out so well!

      Oooohh! So THAT’S the secret to using tofu: DRAIN IT! Seriously, thank you. No wonder my tofu has never turned out quite right. It was so bad, that I switched to tempeh, which I love now! But good to know. 🙂
      P.S. I am always a few minutes late to work, but I just can’t bring myself to wake up any earlier. I usually stay late to make up the time though.

      I’ve never bought a curry sauce from the store – recommendations?? Not even a huge fan of it at restaurants, but I feel the need to give it another chance, just for some variety 😉

        I love the TJ’s curry sauces. They have 3 different kinds. They are all pretty mild – spice wise, but you can add more to your preference.

      I like your pile of heavy things! I normally use books, and then they get wet. That is just stupid now that I see your stack!
