Hello! I’m actually flying above you right this second {waves from airplane} on my way to Florida. Ben went back last week and now I’m headed that way to hang out for a lil bit. The long term plans of my life are 100% up in the air (just like me) but I’m not worried about it (oddly).
However, I am worried about what I’m going to eat. I’m always worried about that.
Luckily, I didn’t have to worry about that for a few days last week because Veestro, a vegetarian meal delivery service, sent me a few days worth of meals to enjoy. I wasn’t sure if I was going to be all about it, but every single thing I tried was really delicious. And since it’s Meatless Monday I am sharing my thoughts about Veestro with ya…
Breakfast… I got back from a run just in time to find a big box on my doorstep. Seriously perfect timing! I unpacked the box and immediately microwaved the Oatmeal Bar. This bar was more like a baked oatmeal dish you’d eat with a fork. It had cranberries and walnuts and I liked it a lot.
All of the meals come with nutrition information on the label. I want to say this bar was about 320 calories and it was super big. It was also gluten free. Boom!
Lunch was this Risotto dish. I have been really obsessed with rice lately. Don’t get me wrong, I’ve always liked rice but now I want it everyday. I even bought those ready-to-go packs of microwaveable brown rice from Costco and have had them as a snack! Ha! #TeamCarbs
Anyway… the risotto was great. And the texture was spot on too – that’s hard to find with frozen dishes.
Another day I had this kale and tempeh salad for lunch. Two salads came with the pack. For these you just place in the fridge overnight to thaw.
Dinner was a red curry tofu dish with two brown rice mounds. I heated it up in the container it came in and then plated it for presentation. This made it fancy, right? I like curry, but don’t usually love it (read: I don’t order it at restaurants but I’ll steal yours) but I completely licked the plate clean on this one.
Thoughts: The meals were all delicious. Love that there are plenty of vegan, dairy free and gluten free menu items. And even though it was frozen, it didn’t taste super processed.
Yes, it is expensive, but that is super common with meal delivery services.

Back to RER on the road… I took Vegas to my mom’s to cat sit while I’m gone and he reminded me he does NOT like the car. I know cat, too bad.
And during my layover at the PHX airport I met Antonio Villaraigosa! Whhhhat? He’s the former mayor of LA. And he’s probably going to be president some day. I totally acted like a dork because we were passing each other in the terminal and I was like, “OH my gosh! I have to meet you!” and I just stopped him and started blabbing about who knows what. #GetItTogetherMonican

I have met a few politicians in my life. I met Gil Garcetti when we did our 6th grade trip to LA (father of the current LA Mayor).
And I work with close to a dozen Sothern California Mayors and County Supervisors at my job. I am a big dork when it comes to local politics and ideally will transition to more of that field in the future.
Poor Vegas had to go back to your mama’s house. I hope he doesn’t mope around the whole time.

FL is crazy hot! I was just in South Beach for my cousin’s wedding and we were melting just sipping cocktails, none the less running!

Am i understanding correctly that your husband lives in Florida? wow that is crazy long distance! Props to you for making it work! Do you both travel back and forth a lot?

I don’t take my cat on vacation, but she is really good in her travel box. I think it’s because I used to take her to my boyfriend’s all the time when I got her as kitten so she’s never had any of that typical cat beef with riding the car. She is absolutely silent!

i live in dc so I’ve met a lot of politicians, including President Obama (the night before he was elected – amazing!) and Hillary Clinton (last summer) but recently my bf had the best sighting – he met and bought drinks for the cast of House of Cards at the Four Seasons in Baltimore (they film nearby)!

Get ready for the humidity in FL! I just tried to do 3 miles and died at 2.6. If you’re anywhere near Sarasota, I recommend running the John Ringling Bridge-it’s gorgeous!
I planned on traveling from Fl to NJ with my 100 pound golden retriever in my spacious mazda 3, but my husband and I decided to leave her behind with the in laws instead.
I never met a famous politician, but Kelly Ripa is from my hometown in NJ and I met her once! haha

I have met a few politicians but the one that stands out is Charlie Crist because when I saw him I instantly thought he looked like a Sleestak from the Land of the Lost and I couldn’t stop laughing. It was quite embarrassing.
I almost always travel with my pets. They’re spoiled.

I think that it is ok that your life is 100% up in the air right now. This is an excited place to be, just make sure you are prayerful with everything going on right now and God is faithful and he will show you the way. I have been where you are and God is always good!

I saw you running this morning! My trainer lives off El Toro and as I was leaving, there you were on the path! I met a senator on a school trip to DC in 6th grade. That’s the only fancy politician I’ve met and he really wasn’t fancy at all! LOL

How are the Veestro meals on sodium? I’ve been waiting for a vegetarian food delivery forever now and since I have my second baby on the way, it is perfect timing! I just hate a ton of sodium in my food and since these are frozen, they might be loaded. Thanks!

I met Jerry Orbach once while he was filming Law and Order. He’s not a politician but I thought he could totally be the mayor of NYC.
I just got back from a one day road trip that involved my boyfriend and I and our dogs. We drove from NY to Virginia with a few stops in Maryland. My dog Duncan literally sat on my lap and slept the entire time. Boyfriend’s dog Chester….well he’s not exactly calm in the car. There was a lot of whimpering and drool happening. =)
