Meatless Mexican Monday – Salsa Scramble

Welcome to another  round of Mexican Meatless Monday!

I was hungry and wanted to make something super easy tonight. So, I layered beans, eggs scrambled with onions & peppers, guacamole, cheese and salsa for an amazing burrito!

I used TJ’s Black Beans for the first layer. These are the best canned beans I’ve ever had. IMG_8317

I recently realized that guacamole has the same amount of calories as hummus. I used to think guacamole was so high in cals, but I don’t think that about hummus.

To realize they are the same is exciting for me because I can swap hummus for guac sans guilt. IMG_8319

I was very excited for Dessert tonight. I planned to have my last VitaTop after dinner…IMG_8323

Foiled! The package was empty and I didn’t realize I had already eaten the last one. Major dessert fail. Oh, don’t worry you know I’ll find a Plan B.

I am super sad today 🙁

Last night I went to sleep super depressed because LOST is over. Uh. I feel like I lost a friend. I am really bad with good-byes and since I watched the entire series this summer I really invested a lot of time and love into this show and these people.

I feel like I am never going to see these friends again. lost_poster

Then, this morning I really did lose a friend.

I had to take Lisa to the airport. Boo. This trip went by way too fast!IMG_8264

I think my depression made me clumsy because I accidently dropped my water bottle on my laptop this afternoon. F.you.see.kay.

I quickly flipped it upside down and dried it off. Then, I blew it dry. It was still acted crazy and I think I lost a few years of my life. But, I gave it a few hours and I think it’s okay.IMG_8314

      So, when you spill a liquid on your laptop, the most important thing is to remove power from it. Yank the battery and remove the AC adapter. This prevents the computer from short circuiting. Then you want to flip it over and let it air dry completely. Submerging it in uncooked rice is a good way to draw liquid out of electronics (works really well for cell phones) so if you have that much rice available, go for it. But it needs to be left alone and power-less for at least 48 hours to give it time to dry. Good luck!

      Ack, I’m glad you acted quickly with your laptop. Hopefully it’s okay.
      I didn’t watch Lost (gasp!) but I understand that horrible feeling when your favorite show is over. I felt the same way about The Gilmore Girls. It was like Tuesday night would never be the same again.
      I’m happy that you had a great weekend with your friends. The west coast needs DD asap. When I lived in CA, my grandpa (from New York) visited and complained the whole time because we had Winchel’s doughnuts and no DD. Now that I’ve lived on the East coast for many years, I can understand his complaints.
      DD iced coffee is soul soothing.

      I’m soooo sad Lost is over! I was sort of bummed about the final episode. It felt a little bit like a let down 🙁 Oh well. Still love the show, sad it’s gone.

      I’ve been watching Lost from the beginning. 6 years!!! It’s a bummer. Same with Friends and Sopranos….. Sigh. And ABC is canceling Flashforward- which was good and gonna be a great replacement for Lost. Oh well.

      I love mexican meatless monday! Delicious! I haven’t had guac in awhile either and now I crave it.

      Ohhhh no on the vitatop all gone. I order those in bulk because I eat at least one a day. lol

      That burrito looks delicious–TJ’s really does have the best canned beans. And you can never go wrong with some guac! 😀
