I have been thinking about making PB & Banana Stuffed French Toast for a while now, but haven’t had the time – until today!
With PB, eggs and whole grain bread – this meal is perfect when you need a super filling and delicious breakfast! (I am usually a hungry beast all day the day after a long run so hopefully this will keep me full for a while.)
First I made a PB & Banana sandwich on whole wheat. I sprinkled it with cinnamon too. *I put PB on both slices of bread to make it stick together.
Then, dip it in the eggs… cook on both sides until brown.
PB & Naner Stuffed French Toast!
I drizzle it with maple syrup (it doesn’t necessarily need it, but it makes it better!). You can also just dust it with powdered sugar.Amazing. Seriously, amazing. Like I said, I am usually a hungry caterpillar all day on Sundays after a long Saturday run, but the combo of fats, protein and whole grains make this a filling breakfast!
Happy Sunday! We have a lot of errands to run, hoperfully we will get them done and we can finally see Food Inc. I could have seen it at a theatre next door to my yoga studio in Orange County, but I missed that boat and now have to go all the way into D.C.

Hey there – I see you’ve chosen to do the Walt Disney World marathon in January. Good call !! I have done the Half there twice and LOVED it ! It’s just magical, running through the park as part of the race ! You will have a blast !!

I have never thought to stuff french toast like that before – awesome idea! My favorite addition to breakfast is something with healthy fats, it keeps me fuller longer, especially when combined with fiber (smoothies + nut butters, oats + nut butters. All yum!)
