The Surprise in My Potato?!

Hello! I spotted purple sweet potatoes at Trader Joe’s this week and knew it would be the star of this week’s Meatless Monday dinner. I love sweet potatoes and I was hoping this was a fun new version of an old fave. This dinner is super healthy and came together in ten minutes thanks to the microwave.

First, let’s talk with new to me purple potato…

They are Muraski Sweet Potatoes. I was super excited when I got them – I’ve always wanted to try a purple sweet potato and was secretly hoping it was super purple on the inside and full of magical vitamins and anti-oxidants that would solve all of my problems in life.

Yeah… that didn’t happen.

It was white on the inside!! I guess “Murasaki” means purple in Japanese. But these special taters have a white flesh. Oh well, it’s still healthy and delicious. I think it tastes like a ‘normal’ sweet potato (which I love).

Here is the nutrition info, it’s similar to an orange sweet potato.

I paired my lil Murasaki with beans for protein and green beans for veggies. This meal came together in 10 minutes because I cleaned and pierced the potato with a knife and cooked it in the microwave for about 5 minutes. Then, I let it set (it keeps cooking on the inside) and heated the black beans and green beans. Done and done.

In other news… my strength workout from Sunday left me sore in all the right places today (and just enough that it felt good in a weird way?). I’ve got to remember that workout so I can share it with ya!!

And let’s end this lil session with a pic from Vegas. I would say “Hi from Vegas!” but he doesn’t really care about anything except turkey and me leaving him alone today…

      i eat all the meats but what the heck, why is that potato not at least a color on the inside. was it weird that it was white but tasted like a sweet potato? i think that would totally throw me off

      Those are the best sweet potatoes! I love them with a lot of cinnamon all over them. I have been meatless since age 5.

      Weird, I just bought a bunch of these today! I accidentally bought them once and now they’re my absolute favorite potato.
      On meatless Monday, I usually do some type of eggs for dinner. Or eat a bunch of Greek yogurt. Does that count?

      I love cooking sweet potatoes in the microwave, then adding some almond butter and cinnamon. It’s magical.

      I had a chicken sliced and put on top of a salad. Not meatless. Oh well. I also polished off a bag of vanilla sugar wafers. Those things are like popcorn. I just keep going until the bag is empty. Lesson learned. I won’t buy them again.

      Yeah, we do meatless Fridays during lent too. We had meatloaf, baked potatoes (mine was a sweet potato) and green beans. That Mursaki sweet potato looks super cool. I’ll have to take a trip to Trader Joe’s to check them out. (the closest one is about 45 min. away)

      I do meatless Tuesday because I usually have left overs from the weekend that have meat in them so our family usually has those on Mondays.

      You got me all excited for a second that TJs was selling bags of purple sweet potatoes. The true purple ones are called Okinawa sweet potatoes but they are tan on the outside. So the ones you bought were reverse Okinawa sweet potatoes. I’m sure they still have some good vitamins and anti-oxidants and can solve about half of your problems.

      Oops! No meatless Monday-I’m doing meatless Friday for Lent! Today was bison and veggie stir fry….yum!

        It’s meatless for me every day! But I enjoyed some veggie stir-fry with chinese noodles. It was delish.
