Raw and Fried

I ate Raw veggies and Fried veggies for lunch today.

First in the form of a salad:IMG_6250

and then in the form of chips. Both were delicious in their own way 🙂IMG_6255

But, I’m going out of order here, this morning Ben and I went for a walk. It was a gloomy day, but at least it’s not raining anymore!!IMG_6243 I guess it rained so much yesterday it brought up a bunch of muck into the little lake near by. The water is sooooo brown. IMG_6244

After our walk about I came home and made pancakes. Whenever I made pancakes I end up making a huge mess of the kitchen, but I love them so much I would do it everyday if I had the time and ingredients 🙂 Maybe.IMG_6248Toppings included maple syrup, almond butter and a new pumpkin butter. Happy Sunday morning to me 🙂IMG_6249 

I have been wanting to bake for a while, but I haven’t been able to since I gave up sweets for Lent (which has been a fail, but is for the best interest of IE and not binging). But – I found a healthy Irish soda bread recipe that wouldn’t be considered a sweet.

I was a little worried it wouldn’t come out right since the last time I made brown bread it was just okay. It looks okay, doesn’t it?IMG_6260

It was very dense since I used all whole wheat flour. I ended up topping it with pumpkin butter too. It’s not sweet or grainy enough to eat straight up.IMG_6264Other eats from today include the cookies and a small bowl of cereal. I really need to grab some fruit! IMG_6253And the “Healthy Highlight” of the day was this Kombucha! I feel better already 🙂 I just wish this stuff wasn’t $4.50 a bottle. IMG_6252

**Yesterday add on: Last night I ended up staying up super late having “heated discussions” with Ben. I ate a grilled cheese sandwich and chips after midnight. And maybe a hot pocket sometime around 11pm… No pics, but mentioning it for my own awareness/accountability.

      We will get through this and are a firm believer in your program. It is unbelievable to walk out of a high rise building with 2 boxes of whatever you have accumulated and then say now what, makes us all want to work for ourselves and control our own destiny, not that that doesnt have problems but these times are a wake up call to America to not live excessively and beyond our means. I believe we will be better for it when the dust settles.

        I got them at MOM’s a local health foods store, but I’ve seen them other places. The entire package of 4 cookies was 200 calories = 50 cals a cookie.

      I consider weekends my “cheat days” where I typically eat not only in excess, but outside the realm of healthy as well. It’s the one time I’ll let myself have chicken wings or a donut.

      This weekend might have put an end to cheat days. I overate soooo badly on Saturday afternoon that I was weighed down for my hockey game 3 hours later! I hate the feeling you get when you overindulge, so I don’t know why I still do it! Maybe I should have given THAT up for Lent!!

      I had trouble deciding between two dishes at our anniversary dinner Saturday night. I went with Ahi Tuna instead of the shrimp pasta stuff that was served in butter sauce. SOOO glad I made the choice that I did because it was delicious!

      I’m notorious for HATING salads but over a vacation last week I had one at Olive Garden and sorta fell in love. So, this weekend when I got back I made an amazing salad with field greens, cucumbers, onions, tomatoes, and TJ fat-free Balsamic dressing.

      I’ve never tried kombucha, what does it taste like?!

      I’ve been trying to make an effort to eat salads for lunch and having a post recovery shake after working out! So far I feel a lot light with these changes in the last 2 weeks and will definitely keep up with it.

      Yam chips, and BBQ’d chicken. First time I have had meat in many weeks. I have a 20 buck watermelon in the fridge I will be cutting up tonight. It better be the sweetest thing I have ever tasted. LOL

      I finally bought a bottle of kombucha (only three bones here) so that was something new and healthy. Besides that I didn’t try any new foods but I did run my first 5K so that was my new healthy thing 🙂

          Earthfare–it’s like Whole Foods since we are ghetto (keep in mind I’, in the South) and don’t have one. Not sure if you have them up there but they had a huge variety!

      I had a pretty unhealthy weekend to be perfectly honest… well not terrible but I may have had too many sweets and alcohol… But today I turned it around with a green monster for breakfast with an egg white omelet and a veg stir fry for dinner.

      I’ve never tried Irish soda bread! I saw it in the store this week though!

      yum irish bread. looks great. i guess overall my weekend was pretty healthy eating overall. i did have ice cream each night which would technically bust that idea but i usually do anyway 😉

      The salad I had for dinner last night was the healthiest thing I’ve had all weekend. It was pretty epic.

      There are lots of things to bake when you can’t eat sweats! Baking bread is a great idea. I have made two batches of honey whole wheat bread lately. It takes forever, but it’s awesome to have fresh bread in the house.

      I had a kombucha yesterday, can that count as healthy? And a big vegan cookie right now–super healthy because it’s vegan
      Annnnd after a chickpea-less week I have 2 cans! Super psyched. That will last me… a day

      Most of my weekend involved healthy eats. I also had a snack late last night…a turkey sandwich on wheat. I stayed up later than normal and could not go to be with my stomach empty.
