I roasted a bunch of chickpeas into oblivion today. But, I did still snack on a bunch of them (even in their charred state) as I was cooking dinner so I wasn’t hungry when dinner actually rolled around.
For din-din I made Spinach & Feta dip with Oikos yogurt…
Ingredients: 1 small container plain Oikos, 1 cup frozen spinach, 1/4c mayonnaise, 1/4 c feta & red pepper flakes, salt, pepper to taste.
Directions: Heat spinach in microwave and squeeze out all the excess water in a towel. Mix yogurt, spinach, mayo, feta, red pepper flakes, salt and pepper together. Serve as a dip with chunks of bread. Enjoy!

I also topped Ben’s chicken with the dip. He thought it was a little too strong to eat like this and ended up putting it on a slice of bread.
My dinner was many samples of spinach & feta dip with bread and eggs with half a sweet potato. I was not hungry, but didn’t want to skip dinner (and set myself up for a kitchen raid at 10pm) so I tried to keep it on the light side (for me).
I am still planning on eating the remainder of my burnt chickpeas tomorrow though… #chickpeafail I hope this doesn’t get me kicked out of the Chickpea Lover’s Club. Rose, am I still in? I tried doing the 30 day shred a few months ago. It’s a good workout but I found it hard to do every day bc of time and wanting to do other workouts. Good luck with it! I haven’t done level 3 yet… I’m kinda scared and level 2 kicks my butt pretty good!

I swear, Greek yogurt is one of the best additions to any recipe. My fave is adding a few tsp. of olive oil to some yogurt and some seasoning – usually a ranch or herb seasoning packet, and using it as veggie dip! No one can tell it’s not sour cream in the mix!
