Hello! I am on a new mission to become a hippie and eat sunflowers and drink green juice all day. Peace.
But, I don’t have a juicer, so there’s that. #MexicanGirlProblems
Luckily, I just got a new fancy blender from Blendtec and have been playing with it for a few weeks (thoughts on blender coming soon). Apparently, you don’t need a juicer to make green juice! And if you use mint from your patio garden like I did you save another dollar. Score!
Cucumber Mint Juice Recipe
{Easy. Healthy. Vegan. Gfree. Magical.}

- 1 cup coconut water
- 1/2 cup cucumber
- handful spinach
- mint leaves
- stevia or a ripe kiwi, peeled
Blend. Drink. Repeat.
Here is your local Monican making green juice.
Question: Are you sipping on gin and juice right now?
My friend keeps giving me tons of cucumbers from her garden so I need to try this! We have a Ninja blender and love it!
laaaid back. with my mind on the money and the money on my miiind.
Looks refreshing, thanks for sharing the recipe. I just bought a Blendtec last week and have been making smoothies since. Favorite combo is watermelon with a hint of lemon.
Not much of a fan of juices or smoothies – I’m the kinda gal that like to chew, eat her food, fruits. My parents planted a bird eye’s chilli shrub at home and plucks a few when cooking curries.
I’ve been so lazy and haven’t been making green juice, really only breakfast smoothies… this one looks so refreshing, I will have to try@
All I’m drinking these days is Diet Sprite- crazy stuff. I have a juicer but it is SUCH A PAIN IN THE ASS to clean I’ve used it twice (luckily it was a wedding gift). I like the idea of being able to “juice” in a blender, though, since you can retain more fiber that way.
I drink half unsweet tea half diet sprite from Sonic and it makes me happy.
Damn I’m allergic to mint 🙁 Green stuff is so yummy though! Although I’m only thinking of Shamrock shakes
Love this! I’ve been really into trying new recipes for green smoothies, so can’t wait to try this!
yum! i’m not a fan of coconut water on its own (which is odd because i love coconut in general), but i love the addition of cucumber and kiwi! =)
looks delish! 🙂
I’m not sipping on juice right now, but my husband has definitely drank the juice kool-aid you could say. We got a juicer from our registry and I’m started to be concerned the poor boy doesn’t eat solid food anymore. It’s like a game for him.
Yum!! I love fresh juice!! It’s so refreshing, satisfying and healthy!!
I’ve been juicing carrots, apple, and ginger and I love it!
Sounds like a great combo!
Smoothies are better anyway since you get all that great fiber! Juicing is not a trend I’m jumping into.
I didn’t juice today but I did have an awesome Vega Recovery Smoothie after my failed attempt at speed work today 🙂 haha jk! This is awesome that you can juice! I think my blender can juice too I am just not quite sure how!
Speed work ftw!
I love you and this recipe. Thanks for making my life simpler to become a hippie as well.
Thanks Liz 🙂
pardon the redhead pun, but it’s also super magical to add ginger to this juice 🙂
Love it.
We have a blendtec….it’s awesome!!!
I love buying fresh juice but everytime I spend 10 bucks on a tiny juice I want to cry.
Seriously.
I have a Blendtec and I love it so much! I use it every.single.day!
Yeah! I’m still learning what it can do, but so far so good!
I made a really yummy watermelon juice with mine – I love that I’m able to juice with the blender!

I have a juicer and a Vitamix blender, and I find that I use the blender way more! It’s easier to just blend everything up, and the fiber’s good for ya 😉
