Easiest Bean Soup Recipe of Your Life

I have the easiest bean soup recipe ever ever. But first let’s talk running and eating and my crazy hairs. Last night when I went out and my hair was BIG. But after sleeping on it I liked the more relaxed beachy look…

Too bad I had to live my life and go run. Oh well.

Now I know I should wake up at 6am to go out, curl my hair, go back to sleep, wake up ‘bout 5pm and get ready to go out drinking and dancing.

After my run I headed north to my mom’s because I had to return one of the dog beds I bought because it was becoming unraveled. Since I was in the area I completed a few other errands. I was a whirlwind of productivity.

I bought ingredients for recipes and projects, hit up the bank for RER stuff and made some trail mix to snack on whilst blogging.

Now Meatless Monday with a Mexican twist is back! I’m trying to keep it meatless on Monday but I feel like cooking vegetarian is harder than just cooking up some chicken and adding it to whatever veggies and microwaved potatoes I’m eating… luckily this is a super easy bean soup recipe.

Easy Bean Soup Recipe

{Vegetarian. Gluten Free. Easy.}

Ingredients:

  • 1 can ‘refried’ beans pinto or black
  • 1 cup vegetable broth
  • 1/2 cup roasted salsa
  • Salt and Pepper to taste
  • Toppings: grated cheese, crushed tortilla chips, avocado, hot sauce

Mix beans, broth and salsa in a pot and heat thoroughly. Season to taste. Top with cheese, chips and avocado. Enjoy!

      Definitely cheese, chips, avocado. I love avocado but not over warm soup!

      I am pretty productive today, I’d say maybe a 7. Went to the gym, took the dog for a walk, did a little shopping at the farmers market, and now doing some school work watching the Red Sox home opener!

      eating meatless is easy! zucchini nodes and pesto/ vegan cheese sauce/marinara, sprouted beans and salsa in lettuce cups, raw romaine leaf tacos with salsa, shredded veggies, quick blended gazpacho …so many options 🙂

      There are some days that I am totally a 1 (waste), and others I am killin it…I wish I could just be productive on an average scale all the time instead of an all or nothing!

      I had a super easy bean soup recipe for lunch today. I didn’t have all your awesome toppings though. I would choose cheese, avocado, then chips.

      I would rate my productivity about a 7, but I am going to go clean my kitchen and make dinner so if I get that done j get an extra point!

      Cheese – yuck
      Avocado – yuck
      Chips – yuck.

      Hahaha! I eat a ton of sweet foods….. Peanut butter, cinnamon, apples…. If I could eat those 3 things the rest of my life…. I’d die a happy person!

      Productive – 3

      After my speed work early this morning, my manager called me and said I don’t need to come into work today (snow and freezing rain does that! Working at a retail running store also does that!) so I was done with everything I had to do by 9am……

      I feel like cooking w meat is much harder bc it’s a whole extra step. The vegetarian meals I make take so much less time! Unless you count throwing a chicken in w pasta sauce and letting it cook on the stove in like 15 min. That’s definitely easy.

      Your hair looked awesome when you woke up. I love when it’s all fancy the night before and then I look like a messy movie star when I wake up…or at least I feel that way.
