So yeah, I did it. I caved and made the 3 ingredient cookies Tina told me about. She actually texted me the recipe so it was impossible to ignore
But, I changed 2 out of the 3 ingredients so Ill say these were “inspired” by the OG 3 ingredient PB Cookie recipe.
I used the Organic Coconut Palm Sugar* I got from Blogher Food this weekend. I also used almond butter instead of PB because I don’t like to eat this AB straight up. No thanks.
Ingredients: 1 cup coconut sugar, 1 cup Almond Butter, 1 egg
Mix. Drop big spoonfuls onto a baking sheet and press down with the back of a fork. Baked at 350 until done.
***I don’t like coconut-y things and this coconut sugar does NOT taste like coconut at all. It’s grainier than brown sugar and I think a little less sweet too. The nutrition stats are similar to brown sugar and it’s compared to it on the package.
I had to pick up Ben from the airport last night around 11pm. He still went on his family’s annual trip to Marco Island that I had to miss for work.
So by the time we got to sleep it was almost midnight. I didn’t set my alarm this morning because I need some extra sleep, but my internal clock still woke me up at 5:30am today. Darn it.
Once again I was pressed for time (reoccurring theme this week) and just busted out 4 miles without any watch. I’m hoping to sign up for a local pool or something this week so I can finally start tri training!!
And I wore my new Brooks Running shoes! I recently was brought on as a Brooks Running Ambassador and unfortunately had to decline a big fancy trip to New York (with Meghann and Janae) because I have another trip to the big apple coming up soon.
Anyways, part of my partnership means Brooks gear. I train for marys in Brooks Ghost so I’m super excited to try their latest edition!
My little brother is being promoted from 5th grade today (they don’t call it a graduation)!!! So, after a super quick shower I grabbed the overnight oats I made last night and headed to my mom’s.

Last night I combined: 1/3 cup Coach’s oats, 1/3 cup almond milk, 1 container TJ’s vanilla greek yogurt and 1 tsp chia seeds.
This morning I added: 1 packet stevia, 1 Tb almond butter and bloobs.
If you watched my Subaru video you know I got in an accident while eating oatmeal before.
The drive brought back old memories of my killer commute. I don’t miss the drive, but I do miss listening to NPR for an hour.
Okay, I’ve got to get some work done then I’m headed to his ceremony!

early spring i traded in a 1-1/2 hr commute for a 15-20 minute commute (usually 20-30 coming home). Was the best change ever despite the massive pay cut I took.

I commute 3 hours everyday, i take 2 trains from NJ to NY (1:30 to go)and NY to NJ (1:30 home). Sometimes it can be longer if trains are running delayed or tracks are experiencing difficulties.

I have a 25 mile commute 4 days a week, but I can’t really complian because my work has a whole fleet of vehicles and I get to ride in a vanpool, pay $17 a month and drive it maybe once a week.
I just bought some PB, that I thought was AB actually so I might have to give this recipe a try – SOON! I love sugar in the raw and the way you are describing coconut sugar has me thinking I might like it.

we leave at 6:45, I drop V off at school, approx 20 minutes later (12 miles) to get to the train station, where I literally run to catch the train, and am at work by 8:15.
on the way home, I leave at 5:15 to catch the 5:42, get off the train by 6:20, race to Grandma’s, grab V and is home by 6:50 most nights

My commute is half an hour in the morning, and 45 minutes in the evening (traffic). I listen to NPR both ways unless I need music to keep me awake – I have to be at work by 7 am and I work 10-12 hour days. It’s through the Vermont countryside with views of farms, Lake Champlain, and the Adirondack mountains, so I don’t complain (most of the time).

2 days a week i commute an hour to work and i always eat overnight oats on my drive!! it can be tricky, one time i accidentally flung oats all over the interior of my car!

I’ve actually just been thinking about commutes lately. Last summer, I had an internship that, despite not actually being geographically far from my home, had a 1 hour & 15 minute commute in each direction. It was a great experience, but man, that commute SUCKED. This summer, I have 2 internships that are both a 20-minute commute. SO MUCH BETTER!

I made the 3 ingredient pb cookies last night! The recipe only yields about 15 very small cookies so they are good if you want a quick sugar fix… I would be interested to find a way to make these with a lot less sugar, though.

My commute for the past two and a half years has been eight minutes long. However, I do still listen to NPR during that very short commute!
Starting next week I’m going to grad school/being my own boss as a life coach from home, so my commute will be even shorter. I’ll just have to turn on the radio in the house to get my news.

My commute to work is a whole 5 minutes. I work at 4:30am so there is no on the roads it’s pretty awesome I am not used to traffic so when there is any it’s gives me road rage! haha

I remember being bummed in 8th grade because they didn’t call it a graduation. I had an 8th grade “promotion” into high school. Why can’t they just call it a graduation? Wouldn’t hurt anyone.

That’s crazy. I know one of Ben’s coworkers used to do that, but take the train and leave his car in Irvine at the station so he could get to work from there.

I live in AZ so my commute to work is about 30 minutes but I have to leave my house super early (before 6 am) to get that kind of commute. In the evening, it takes me a good 45 minutes to get home. So frustrating. But it’s nothing compared to So. CA traffic! 🙂

Wow they sure go to school late in Cali!! I just started a job with a 30 min commute…two lane highway the entire way. Most of the time it’s not bad, but this morning I was stuck behind an oversized truck going 45…the entire way. Shoot me.

Ugh, yes, I have a long commute. It’s anywhere from 1 hour to 1 hour 45 minutes (or more) EACH WAY. It’s the worst part of my day and I dream about working from home….or being able to walk to work again. Really frustraing and it totally makes me more depresed and exhausted. It’s crazy how you can be exhausted from commuting….which is so inactive!

We bought a house a couple of weeks ago and I’m still adjusting to the new commute.
On normal day, it’s not that bad –> Drive 10 min to the bus stop, take a 50 min bus ride and vice-versa. I leave my house by 7:30 am and come back at 6:15 pm
But twice a week I go to school from 7 pm to 10 pm. I have to drive 30 minutes to a different bus stop and then take a 30 min bus to get to work. The at 5 pm I take 2 different subways to go to school.
After school, I take the 2 subways back to work, bus back and drive back home. It takes me 1h30!!!
I hate it. But I love our new house. What’s a gal got to do?

I ALMOST took a job that involved waking up at 5:30 a.m. being at the train station by 6:20, getting downtown by 7:30, and then having to walk 3.5 miles to get to work by 8:30…and then get off of work at 5:30 p.m. (if I were to actually get out on time), take a 6:40 train and not get home until 7:45 p.m…..then repeat. Needless to say I am currently in a job that involves a 5 minute drive or a 20 minute bike ride.
