Flashback Friday and Big Salads

I am obsessed with BIG salads lately! After Kickboxing I was starving! I rushed home and threw together a salad that would rock your world.

I hate that pictures can’t capture the sheer magnitude of this meal. It had spinach, mushrooms, onions, tomatoes, cucumbers, carrots, cabbage salad, chickpeas, hummus, hot sauce…big salad

I like my chickpeas warm so I heat them up in the microwave straight in the measuring cup. And it’s safe to assume many more chickpeas were consumed in the making of this meal 😉chickpeas

You know how everyone gets the biggest thrill out of new toppings for oatmeal? Well, a salad is like my oatmeal. I love getting different bites with new, good stuff.IMG_7604

I may have eaten 5 servings of Pirate’s Booty too…  IMG_7606

Flashback Friday: I was going through some old pics and found this picture of the grounds of Domain Chandon winery in Napa. I think it is beautiful.

Ben and I were road trip fiends back in CA and drove from Orange County to SF and Napa on a long weekend. It’s about 8 hours away!monica with chef

When we couldn’t drive, we took a boat. Like the time we went to Catalina Island. That was a blast! monica and ben catalina

Any big plans for the weekend? I think Ben and I are going to do some exploring 🙂

      Apple now has Rhapsody as an app, which is a great start, but it is currently hampered by the inability to store locally on your iPod, and has a dismal 64kbps bit rate. If this changes, then it will somewhat negate this advantage for the Zune, but the 10 songs per month will still be a big plus in Zune Pass’ favor.

      I at present have a Lexmark, I am OK with the good quality but I’m very unhappy with how quickly it goes through ink. I need to have something that will print top quality documents and not drain me dry using the charge of ink.

      I am totally the opposite with my salads. They always have consist of the exact same veggies. I know what I love : romaine, radishes, carrots, broccoli, red cabbage, green onions and homemade ranch dressing. Perfection…. =)

      I’ve gone crazy with the monster salads recently! Everyone gives me a hard time that salad is all I eat, but each one is different and amazing!

      Salads are my oatmeal too! I put everything but the kitchen sink in them. If I have leftovers – I know how to use them – in a salad!

      There’s so much fun stuff going on in DC this weekend–I don’t know where in Maryland you are but there’s a tea festival in Laurel and also Passport DC, both on Saturday. :mrgreen:

      We live in Ventura county and this summer I plan on lots of California Road trips. San Diego, Napa, Sonoma, San Francisco, Palos Verdes…Palm Springs….Ok maybe not ALL of them. I would be totally up for it though!
