Hello and welcome to another fabulous Meatless Monday! But, today is not a Mexican Meatless meal. I hope they don’t take away my Green card for saying this, but I prefer Asian food to Mexican.

So, tonight I made my favorite meal to cook and eat at home, a stir-fry!IMG_8645 (800x533)

I used Seitan. I think it’s the most “meat-like” vegetarian protein out on the market. I love the chewiness of it. You can get Seitan flavored or somewhat plain and season it as you like. stir fry on brown rice

I served it over some brown rice to sop up the extra peanut sauce. So good.

Seitan also looks like meat. Ben had to ask me if it was “real” or not before he took a bite. He likes this stuff too! seitan stir fry

People ask me if Ben eats the same dinner as I do when I cook vegetarian. 90% of the time he does, but sometimes I’ll add chicken to his dish. He hates chickpeas so when I’m making something with that he eats something different. Oh, and he always puts pepperoni on his pizza when we make those.

Mid-afternoon I had a Carrot Cake Muffin as a snack. These are delicious heated up and spread with a little Mighty Maple PB. Try it. Try it.

      I am totally the opposite. Mexican food is > than Asian food every time!

      My husband is a meat eater, but we always eat the same dinner. It’s basically the one meal a day that he doesn’t eat meat. I’m actually impressed by how much he’s willing to try.

      How did you make the sauce? Was it just the dressing poured on top? I love love love thai food, so I think I would love the peanut sauce!

      I love the taste of seitan, but Im always afraid to cook it at home! I am going to have to try! There was a chinese food place that I used to get takeout from when i lived in DC and they had the seitan option, I loved getting the seitan with veggies! It was so good!!

        That seitan I got is easier to cook than tofu. Just open up the package and season to your taste.

      i’m very nervous to try soy/vegan meat because i’m always worried they’ll just taste horrible. i’m glad its available though.

      I think I might like the Chinese buffet in hell, LOL. Love crab rangoons! And I prefer Chinese over Mexican, too.

      Seitan is very meaty, I like it. Not sure if it likes me, though.
