Today I was working with: lentils, rice, tomato paste and stewed tomatoes. I considered making the Lentil Loaf I made a year ago (blogs are so cool in how you can keep track of that stuff!).
But, I decided to wing it instead of using a recipe. I figured I would cook the lentils, mix them up with tomato sauce and put it over the brown rice.
After cooking the lentils I set them aside. I sautéed onions and garlic. Then added tomato paste, stewed tomatoes and a bunch of random seasonings including: S&P, mustard, bbq sauce, chili powder and chili sauce.
I topped it with a little cheese and Wa-La! It’s dinner.
And since I was getting all nostalgic about old recipes I also made No Bake Chocolate Oat cookies. This time I made them into balls and rolled them in coconut.
Actually, it wasn’t nostalgia at all – Ben requested I make these. He rarely asks for desserts or me to bake/make anything sweet, so I was all over it!

That looks great to me. I would be asking you for those every night probably. haha. My husband also does not ask for desserts often, so when he does, I make them too.
