mini oreo cheesecakes recipe

I have a confession… In my diet post I said I try not to keep junk in the house, but I bought Oreos last week  I have no regrets, just wanted to share. Well, not share the Oreos but share that information.

I say it’s ‘cause I’m a pirate and I can’t live by your rules!

Okay, I can’t even live by my rules… but self acceptance is the first step?

I should also confess… when I make dessert for a special occasion I always make a mini-one on the side so I can ‘test it’. You know, to make sure some crazy didn’t sneak into my house and put poison in it while I was yelling at my cat for killing a bird.

Anyway.

This recipe is a double win because I used up all the Oreos aaand I don’t have to make a separate mini-version since they’re all mini!

*It should be noted that this recipe makes 12 mini-cheesecakes. But don’t tell anyone or you’ll show up to a party with 11 and it’s obvious you ate one.

But, if you have friends that judge you like that – you need new friends.

Mini-Oreo Cheesecakes

{Makes 11, wink wink}

Ingredients:

  • 1 6oz. plain greek yogurt
  • 1 6oz. vanilla greek yogurt
  • 1 package sf cheesecake pudding mix
  • 12 Oreos
  • Dash milk to thin mix if needed
  • Optional: Sprinkles, Whipped Cream

Directions: Combine pudding mix and yogurt. (Add a dash of milk to thin if it’s too thick to spread.)

Place Oreos in cupcake liners.

Top each cookie with cheesecake batter. Refrigerate for 1 hour.

Tip: I put the mix in a plastic bag and cut off the end to squeeze it out since it’s so thick and hard to spread. It worked great!

Top with sprinkles and whipped cream because it’s fun.

    Great idea! I’ve the locally-made but Oreos inspired cookies and lucky they come in 4 cookies per pack. Will probably sub the creamcheese with soy ice-cream or something vegan.

    curious why SF pudding mix? Just to save a few calories or is the consistency better for the recipe?

    They look so adorable. I have a hard time baking individual things because i sample too many =)

      Saving calories – I used to use this stuff back in the day when I would make weight watcher kinda recipes so now it’s the only kind I buy.

        right! I remember doing the “core” program of Weight Watchers and being obsessed with the SF pistachio pudding mix. I’d add frozen dark cherries to it. Thanks for clarifying.
