Peanut Butter Pumpkin Bread Recipe

A friend at work clipped this recipe out for me, it’s from the Baltimore Sun – Peanut Pumpkin Bread. Pumpkin AND Peanut Butter??!?!?! This must be a dream. I made some modifications to make it healthier and cut the recipe in half. Here is my version…

Peanut Butter Pumpkin Bread Recipe

Ingredients:

  • 1 egg
  • 1/2c peanut butter
  • 1/2c pumpkin
  • 1/2c apple sauce
  • 1/4c soy milk
  • 1 1/2c whole wheat flour
  • 1/2c brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp pumpkin spice

Directions: Mix the first four ingredients in one bowl and the rest of them in another. Then, combine – don’t over mix. Pour into a loaf pan sprayed with non-stick spray. I added mini-pb cups into half the batter (choc chips would also work). The addition of the mini-pb cups really made it delicious.

I topped it with some butter and a tad of brown sugar. It tastes more like Peanut butter bread than Pumpkin, but it’s good 🙂

      Aw, this was a really nice post. In concept I would like to put in writing like this additionally – taking time and actual effort to make an excellent article… but what can I say… I procrastinate alot and not at all seem to get one thing done.

      I have never tried out running tights before, but do have some very slim fitting flaring running pants that keep me warm once I get my body moving. Of course, I also have the heavy duty under armour sweats that keep me super warm in really cold weather, too!

      Your loaf looks delicious! I am baking banana bread right now – the house smells sooo good!

      I love pumpkin bread and that recipe looks easy enough for me!

      I’m running a 5k on Thanksgiving (fingers crossed I don’t chicken out) and I want to buy some running tights for the occasion…do they really keep your legs warm? Do you just wear the tights with nothing over them? I’m the biggest wuss when it comes to the cold so I need to be prepared.

      I’m pretty sure I have all those ingredients so I may just have to make that 🙂 When I first saw that piece of the bread I thought that what you had done was just cut off the bottom half of the loaf to eat.
