I would like to call this lunch, “Veggie Burger Parmesan” – I cooked up broccoli with marinara sauce and topped it with a veggie burger and parmesan cheese. Yum!

I was out in the very violent rain Christmas shopping for most of the afternoon. Well, Christmas shopping and restocking my favorite protein powder supply But that is a necessity! Kinda.
Anyways, since I knew I wouldn’t feel like cooking dinner I stopped at Pei Wei to get food.

I ordered Ben the sesame chicken with brown rice and got myself a kids meal that is not nearly as photogenic (so apparently, I didn’t even snap a pic of it!).

But, I knew a kid’s meal wasn’t going to cut it for my hunger so dinner Round 2 was Roasted Chickpeas in a Peanut Sauce.

Ingredients:
2 Tb. maple syrup
1 Tb. soy sauce
1-2 Tb. peanut flour (or peanut butter if you don’t have flour)
Squeeze of Sriracha to taste
1 can of chickpeas, rinsed
Mix all ingredients and roast at 400 degrees until toasted to your liking. I left mine in about 35 minutes, tossing a few times during cooking.

I roasted mine with broccoli for some greens and bulk.

Unfortunately, my favorite bean is not very photogenic. Oh well, I still love them.
Now I must attempt to go through the pile of mail that I’ve been avoiding! Anyone want to come over and help? I’ll pay you in chocolate covered Joe Joe’s – which are on the menu for dessert

i’m obsessed with peanut sauce. last night we had an awesome pasta dish that included peanut sauce and veggies roasted in cinnamon, sugar, and chili powder. the recipe won’t be up til after Christmas, but I’ll try to remind you..I think you’d like it!

I love roasted chickpeas! One of my favorite snacks. I like to make them moroccan style, tossed with some garam masala and sald, roasted, and then topped with a dollop of plain greek yogurt or NF sour cream. YUM!
Recipe looks really good but BOO for me having no peanut flour! I have no trader joes near me and cant seem to find it anywhere else! I am going to chicago for New Years, and I have to get it then, because there is a trader joes in the city!
You can use straight up PB if you want, but I would taste it to see if it needs tweaks.

those chickpeas aren’t beautiful, but they sure sound tasty!
Broccoli and chickpeas are my favorite combo. And I’m sriracha-obsessed. The stuff really snazzes up any savory meal. Oh, I have a couple piles of mail/forms/random paper that I need to get through myself. Good luck!

I didn’t feel like making a real dinner either. It was a frozen Amy’s pizza for me. Roasted veggie pizza on a gluten-free rice crust. YUM
