Hello! How was your weekend? I’m still hanging out with my little brother. He’s very easy breezy so we’re having fun. And he’s a good sport with food – he is super open to trying new things and testing my recipes. I didn’t share this one though! Don’t tell him, he was at one of those trampoline gym places when I got the idea for Protein Dipped French Toast.
I’ve been obsessed with protein pancakes (again) lately and have even been making them for snacks.
Well, I got this idea to change it up to French Toast with an extra punch of protein while running (where all my good ideas come to me!). This is super simple but takes my usual French Toast up a few steps to amazing.
Protein Dipped French Toast
Ingredients: 2 pieces of whole grain bread, 1 egg whisked with a splash of milk, vanilla and salt , 1 scoop of your favorite protein powder
Directions: Place egg mixture and protein powder in separate wide bowls or plates. Dip both sides of bread into egg mix and then protein powder. Shake off excess and cook through on a hot skillet with butter or non-stick spray. Top with PB and syrup.
Dancing while cooking optional, but it helps.
Enjoy! (I didn’t even really need syrup for this recipe since my fave protein powder adds a nice amount of sweetness.)
I love that Ezekiel or other sprouted grain breads stand up so well in french toast. I think it’s their consistency, but it just works! You can use whatever bread you prefer. But if it is a super soft bread you might want to toast it or let it stay out to get a little stale before making this.
And I made a new friend, this lil bunny on my walk this morning too. I love when a bunny doesn’t freak out and run away from me but just keeps a casual eye on me. I think we’re best friends now.
Question: What should I name my new bunny (that didn’t really come home with me and I can’t confirm I’ll ever see again)?
I like the name Bunny Sanders or for a girl Bunyonce…

I’m hoping to run my first full marathon in 11 weeks. Today was 16 miles, my longest long run ever. Miles 10-14 were tough, but miles 15 and 16 were just plain UGLY. Grimacing and gasping, my form flopping all over the place, I practically crawled those last 2 miles home. The thought of adding 10 more on top of that sounds impossible. Now I’m doubting whether I can do this. Is it normal for my first 16 miler to be THAT bad??

I know you are asking Monica and not me but I can remember a 15 miler heading into my 1st marathon being really, really bad. I got so discouraged and wondered if I could even run 26 miles. However, the following week when I went out for 16, I felt great. I think sometimes you are just off and there may or may not be a reason but don’t let one bad run discourage you. That’s my 2 cents.

We have a wild bunny that lives in our yard and I call it Bocephus. My husband wants to call it Benny the bunny but I live for the unusual and I just cant work with that name. You can use my second choice name for your bunny if you want, Bunny Haha

Sounds like my kind of french toast! Yum! About the bunny…..maybe just bunny so then when/if you see “Bunny” again you won’t have to worry if it’s the same or a different one 😉

This is such a great idea! I’m definitely going to try this. You can call it Billy the bunny. My beagle’s name is Billy. So we’ll have Bily the beagle and Billy the bunny!
