Salmon Salad Sandwich

I was on a mission for a protein filled lunch today. As I drove away from class I considered stopping at Subway for a tuny sandwich (that’s not misspelled, that’s how I like it), but I decided to make use of one of my cans of salmon instead.

I piled what I could in between the toasted bread and scooped the rest on a salad. Looks a little heavy on the onions – I better go rinse.

With all the different flavors (salty, savory, sweet) and textures this meal was super satisfying. I made sure to enjoy it at the table and not turn on the TV or computer until I was done.

I always share a little salmon (or tuna) with Vegas. I’m sure it’s the only reason he sticks around here.

Despite the amazing lunch, I still wanted something sweet after my meal and broke off half a Luna bar to enjoy.

      I love love love Chocolate Peppermint Stick Luna bar…it is my absolute FAV!!! and you are right..it does taste like candy!

      Such a simple but delicious sounding lunch! I need to learn how to do that whole pay attention to what I eat/don’t just scarf it down in front of the TV thing. Someday I’ll get it down.

        Subway Tuna is all I get..and I load it with tons of veggies on 9 grain honey oat bread with spicy mustard…holy tuna…so yummy!!!

      I was at Costco the other day and noticed that they have more than just the pink salmon in a can now! I think the other is keta salmon. Both have low fat content and are less desirable than the other Pacific salmon types, but at least they are wild and not farmed. Farmed salmon is the worst for you!

      I love it when there are different textures balanced with savory and sweet flavors!

      I’m sure Vegas loves you. He just can’t show you because of the cat’s code of conduct.

      I never ever get tired of tuna sandwiches. YUM!

      Vegas is so beautiful. One of the funniest things I’ve ever seen on your blog is when you posted that photo saying all he ever wanted was to poop outside!!

      And salmon salad actually sounds BETTER than tuna salad!!

      That salmon salad looks delicious; we don’t live close enough to TJ’s to get cheap canned salmon so I never get to make it.

      I just “discovered” putting onions in tuna salad though, and it kind of rocked my world.
