Okay. When I get a craving for something it’s like crazy and I HAVE TO EAT THAT FOOD ASAP. Usually I just go out and buy it but yesterday I wanted potato salad but didn’t want to buy the standard bucket o’ potato salad that they sell at the store.
Plus, let’s be honest – store bought potato salad is NOT GOOD. They use miracle whip and put a bunch of weird stuff in it. I only like my fam’s potato salad.
All my aunts and cousins make it that same way = potatoes. mayo. tiny bit of celery. eggs. salt and pepper. that reddish season salt.
And I love it.
So last night I actually made potato salad for one to satisfy the craving. Good call Monican!
Potato Salad for One Recipe
{serves one Monican or two normal people as a side}
- 1 potato
- 2 eggs
- mayo
- salt and pepper
- green onions (because I didn’t have celery)
Directions: Rinse the eggs and wash the potato. Chop potato into inch sized cubes and put in a pot of water with eggs. Bring to boil. Let boil for 2.5 minutes and then remove from heat, top with a lid and set aside for 10 minutes to continue to cook. Drain. Rinse eggs under cool water. Peel.
Mix potato with mayo, season with salt and pepper. Add eggs. Top with green onion.
Be proud of yourself for not eating a whole tub of potato salad at home on your couch while watching reality TV.
But, also be a little ashamed of yourself for hard-boiling 4 eggs because you intended to save two for tomorrow but ate them all.

Saturday morning I took a nice long walk to get some coffee and a treat. Since I had the marathon coming up I was taking a mini-rest day, but still wanted to get a little activity in my day. So, I wore something that was comfy to move in, but still a bit cute and girly.
A rep from the Adidas Golf line actually contacted me recently to give their line a whirl. Even though I don’t play golf, I do:
A.) Want to take it up because I live near a golf course that I run by all the time.
B.) Love preppy gear this this sleeves tank with a collar. (Thank you years of Catholic School uniforms.)
C.) Appreciate an outfit that is comfortable, but not full on sweat pants.
I’ve already been wearing the Adidas visor to run. But tried out the other gear this weekend.
And this lovely morning I was sporting the full zip jacket in clear aqua / layering tank in white / and this essentials skort actually had some legit shorts attached underneath.
(My big complaint with running skirts is the shorts underneath are often too short and would cause chafing the shorts under this are long enough that it wouldn’t.)
Anyway. It’s comfy and fun and that’s what matters, right?
Then, I ate bagels and drank iced coffee and didn’t even spill any on my new gear. Winning.
Also, I’m kinda proud of myself that I found a rubberband that matched the Adidas visor! Boom.

I almost exclusively run in skirts. I love them.

I wear a hat when I run outside … mostly to keep my hair out of my face.
I haven’t worn a skort, although they keep catching my attention. I’m just not convinced they are necessary – I’m ok wearing the shorts, and the skirt material seems a bit superfluous. But cute!

I love my visor. I should get another one because it’s getting kind of old. I have a cap too, but even though it has a ponytail hole, I find it’s too low for me to be really comfortable.

I have issues with potato salad. That and other kinds of salad like tuna or egg. Idk what it is-maybe the creaminess of them? Anyway, if I liked it then your recipe looks great haha 🙂

I LOVE racing skirts, but like Sally I put my own bottoms underneath them.
As for hat or visor, neither for me because I have an enormous noggin and absolutely nothing fits right/doesn’t look stupid.

i always have been a visor girl. I have a small head and hats look funny on me sometimes. I wear Headsweats visors a lot for races. That Addidas one looks especially comfy and cool.

Oh I wish I lived in a country that required a visor to keep the sun out. Ireland is not the place! On the upside we do have the best potatoes – so the best potato salad. Off to make some. How can something as simple as a potato, mayo, spring onions and salt taste ssssooooo fantastic.

1)I like potato salad my grandma and aunt make with mayo and mustard! (Grandma was born in mexi…but we live in Texas) soooo good!
2)I’ve never tried running in a skirt have thought about it BUT I love shorts too much!
3)And I run in hats and visors just depends on day and how hot Houston is that day! Lol
But I will try your recipe its a single serving for me too…. I love food!

So many items here!
1. I only only only eat homemade potato salad and I prefer my own over any one else’s. Not to onion-ey, no dill, just right! 🙂
2. I la-la-love that visor and want one badly. I like the coral color but am afraid it wouldn’t “match” my stuff (that’s dumb because it’s just a great color).
3. I only run in skirts; Running Skirts (with the briefs) OR Athleta with the silicone leg grippy things. I use Body Glide and never ever have a chafing issue (and that’s where I carry ALL extra weight) I need my legs FREE when I run and I get super hot when I wear anything else. If its cold I just throw on some compression calf sleeves or long compression socks.

Whenever we get ANY package at the door my snarky hubs says “oh another running skirt”. SASSY!! Confession: I wear them as weekend wear also (the ones with shorts and no grippy stuff). I just love them!

If it’s a hat it has to be a running hat that is breathable… I get super hot/sweaty when I run and all of that heat escapes through my head. I’m not into running skirts for myself but you ROCK it!
For potato salad I always use the red potatoes. I don’t know why but I like them better… your recipe looks so easy I’m going to have to try it. I agree that the grocery store potato salad is convenient but disgusting!!

I don’t wear running skirts because I don’t wear regular skirts when I’m not running unless it’s a wedding or a funeral, so if I ever run to and from a wedding or a funeral, I’ll make sure to get myself a running skirt. 😛

Cute visor…I just can’t wear them while running. Actually I can’t wear hats or beanies. I get super hot and it gets really uncomfortable. I have one running skirt but found that I can’t run more than 6 miles before the shorts underneath start riding up and I chafe.

Hats! I have super short hair so when I wear a visor my head looks like a… let’s say mushroom.
I wear exclusively skirts when it’s above 40 degrees. I am fond of the Skirt Sports Happy Girl, the longest one they make. The shorts are a decent length and even with my massive thighs they do NOT move or chafe. I’m tall and I like to stay relatively covered even when it’s 100 degrees out, that Adidas skirt you have on looks like it might be a pretty decent length.

What is it about family potato salad recipes that are just always 10X better? My boyfriend’s family makes a German potato salad that is vinegar based and I have never been able to find it as good at any authentic German restaurants. Luckily, it does not come in tub form which reduces my chances of pounding potato salad while I watch countless episodes of Real Housewives.
Hat if it’s raining, visor if it is nice and sunny! I like to pretend that the hat is protecting my precious locks from the rain, but let’s be honest, it’s a hot mess and hat hair/rats nests are forming.

Visors are a staple for me from April thru sept. I sweat a ton and hate when it gets in my eyes. But hats trap too much heat so the visor is perfect. I don’t have good hair for headbands. 🙂
I love running skirts but most of the time I will buy them and cut out the built in shorts and use my own longer compression shorts to prevent the chub rub 🙂 love your matching hair rubber band. 🙂

I don’t tend to wear a hat or a visor, but when I do, I usually will wear a hat! And I do not wear running skirts. Shorts all the way!
