Vegetarian Chorizo and Potato Tacos Recipe

Hello! I’m bringing back Meatless Monday with this Vegetarian Recipe – Chorizo and Potato Tacos. The secret ingredient is the chorizo (which is usually super greasy and not healthy). I used soyrizo in the tacos and they come out full of flavor and so much healthier (and also a lot lower calorie).

This recipe only requires a few ingredients. (Am I the only one that can’t deal with tons of fancy foreign ingredients to make one meal?) Try it out and let me know what you think.

Vegetarian Chorizo and Potato Tacos Recipe

{vegan // gluten free // food}

Ingredients:

  • 3 cups peeled and diced potatoes
  • 1 package soyrizo (it’s near the regular chorizo at most stores)
  • salt, pepper, garlic powder
  • tortillas
  • shredded lettuce and cheese

1. Wash, peel and dice potatoes into small cubes.

2. Place potatoes in a hot greased skillet. Season with S&P and garlic. Cook till soft.

3. Add soy chorizo. Mix to coat all the potatoes. Cook through. (You can use less chorizo if you don’t have as many potatoes, but they soak up the flavor really well.)

4. Place in taco shells (I used corn tortillas) and top with lettuce and cheese. And avocado, but I didn’t have any.

I’m sure Dora would approve of this Mexican Meatless meal! (I totally bought this cereal from the 99 cent store today.)

      I love Chorizo. I need to do this with reg Chorizo (I don’t eat soy because I take thyroid meds).

      I actually have been doing vegan Monday’s for the past 3 years and I love it! In fact, I just posted a chia seed pudding recipe on my blog in spirit of vegan Monday’s 🙂

        I usually leave the skins on too! I love potato skin, but I try to buy organic taters and these weren’t so I peeled them for once.

      I almost did meatless Monday … But then I was at Trader Joe’s and they were sampling their turkey chili with cornbread and I couldn’t resist.

      It was so worth it.

      Now I’m hungry! I’m sticking with my usual dinner of baked chicken and broccoli because I have a photo shoot for working coming up in 2 weeks. Believe me, though, that night I am going to town on some mac n cheese pizza!

      We don’t do any meatless dinners in this paleo family. Lots of meatless breakfasts though…eggs for days and LOVE me some chorizo!! Have a great week.

      No meatless Monday for me. We are having beef stew and since I won’t eat that, I’m having leftover chicken and steamed vegetables. I have never heard of soy chorizo. I’m going to check it out!!

      I prefer soyrizo to regular chorizo every day of the week! I actually am doing a meatless monday today but it is totally a happy accident. But now that I’m thinking about it, I don’t eat that much meat anyway.
