Hello! How’s it going? Over here it’s going great. Extra great for the person who can say they ran their shoes off! Yep, I saw this sole from a shoe on the running path this morning. That is intense.
Also intense… this baked scallop roll I got last night. If you want to learn more on how to cook mouth-watering scallops, you can check out that popular blogger.
Sushi is awesome because you order a ton of different things and eat all of them and pretend like it’s not covered in mayo and teriyaki sauce because your friend ordered sashimi. And I still stick by my view that sushi looks like art.
This morning after running and eating and repeating I hit up Costco for some grocery essentials. I’m either very brave or very dumb because I opened the pomegranate arils to eat on the way home. Actually, I was probably not brave or dumb but just hungry?
And at another store I spotted this new-to-me Chobani yogurt. Dulce de leche!!! Yes please.
And now I’m doing some major meal prep in an effort to get at least one aspect of my life together. I have brown rice in the rice maker thingy. I just roasted a ton of broccoli and I have the rotisserie chicken to shred. Boom. That should last me 1.5 meals. I am so excited about the broccoli.
The best life advice I can give you is to roast every vegetable ever. Ever. Preferably with olive oil and salt and garlic and dip in ketchup or hummus. The end.

Love me some sushi. I grew up eating broccoli sauteed with garlic after they have been blanched in boiling water. Very delicious.

My oldest loves pomegranates. I dislike cutting them open and taking out the arils. Ps. I’m Latina (Mexican) and my toddler is very fair skinned with bright red hair, eyebrow, and lashes. I hope it stays!!!

Awesome!! It’s rare and my brother and I both kept our redhair (I know a lot of people grow out of it). His hair actually got curly in HS but stayed super red.

Now I’m craving sushi.
My favorite way to eat Broccoli is raw. I just love the crunchiness it has, and combined with balsamic vinegar is just heaven.

I spilled a box of snowcaps in my purse the other day. All those little white sprinkles.
In the summer we take eggplant mushrooms onions and peppers and cover them with olive oil and balsamic vinegar and put them on the grill in a grill basket. They get nice and carmelized.

That scallop roll looks amazing!!!! I can’t even begin to guess how many pomegranate arils you dropped. Broccoli…the best way to eat broccoli is in cream of broccoli soup. BUT if you are trying to lose weight, the butter and cream can probably be skipped. But seriously, that’s my favorite!!! On a typical day, I steam the broccoli and eat it with my eggs in an egg scramble / frittata.

I seriously need that sushi roll in my life ASAP. Sushi is hands down my favorite food and I will always tell myself it’s healthy, regardless of the rice/cream cheese/tempura/mayo. There’s still fresh fish and some cucumber/avocado in there, so it’s fine.
Also this might be the first time ever that I have a late night craving for broccoli. It looks delish!

Waaait… was that scallop roll supposed to be a form of sushi?
I’d love to know some new ways to make broccoli too! I enjoy either really soft broccoli – boiling them till they’re all out of nutrients ha ha – or roasted ones.
