That, my friends, is supposed to be a pancake. I don’t know what happened but apparently something went wrong. I used:
about 1/3c oats
1/3 c cottage cheese
2 egg whites
baking powder
dash of salt
dash of water
I think there were too many wet ingredients and it was hard to flip, so I had to cut it into 2 pieces and flip each one individually. The important this is that it tasted good. That was breakie
A little while later I was hungry and cut up a watermelon. I ate a lot of that melon, but at least not the whole thing.
I was hungry for lunch around 11, but didn’t want to eat that early so I had a handful of cereal (no pic) and couple of graham cookies with sf hot cocoa.
Lunch started with carrots dipped in this TJ’s spinach dip leftover from the BF’s b-day fiesta,
and a turkey sandwich. Sometimes sandwiches are just so satisfying aren’t they?
I think I am super dehydrated so I am downing my water. I will be back soon, possibly with a pic of a Crystal Light Slurpee as that’s what I’m craving 😉

Ligher and sara – Good to know I’m not the only one with sketchy pancakes! I still love them though!
Hangry – those insect cookies, graham cookies in general are my weakness!

Finally someone else’s pancakes turn out like mine! 🙂 Mine always become a mess in the flipping process…but they taste good.

Funny about the pancake because I made pretty much the exact same breakfast today, my first time trying out the cottage cheese pancake thing, and had pretty much the exact same problem, only probably to an even greater extent. Mine ended up being more of a “scramble” than a pancake. But as with yours, it still tasted great 🙂
I always just want to say best of luck with your 6 week challenge! I’m sure if you really set your mind to it you will have no problems seeing some real results. And I think having the food blog will definitely help to keep you accountable for all of the exercise and things you put in your mouth. I’m sure you’ll do great!
