How was your Sunday?
After breakfast Ben and I headed to meet up with my family for church.
Easter service is long so we were out around 1pm. My dad hit up a local place for burritos and I stole a big bite.
But, I had already made a big salad by the time he got home… I stole all my mom’s tuna salad. Busted by the blog.
After lunch my mom and I got started on dinner. The ham was already cookin’ and I made a fruit salad, spinach salad and green beans.
My mom and I collaborated on a healthy scalloped potatoes dish. Neither one of us had ever made them (or tasted) a homemade version before! It came out amazing – recipe to come soon.
Cooking took a while and we were just hanging out so we had a veggie and chips tray…
There were no Easter egg hunts today, but the dogs had a rubber chicken hunt…
And Ben had an avocado hunt on my mom’s tree.
We ended up eating around 4:30pm – early bird special? That’s when everyone was done and we didn’t want it to get cold!
The weather is gorgeous so we ate outside.
In addition to bunny cake, we had a fresh strawberry pie from Marie Callendar’s. I don’t consider non-chocolate dishes dessert, but this was delicious!
I bought my Easter dress at a store in the mall called VGeneration (like Forever 21 but cheaper if you can believe it)! I shouldn’t be shopping there anymore, but times are tough. It’s a little tight, but I don’t usually wear purple so I was excited about that.
Question: Weekend highlight?
Mine was definitely that pie…

What do you put in your spinich salad? I’m not much of a vegetable person, but I can suffer thru spinich leaves with strawberries. I’m looking for some other options.
Looks like a fun day! My highlight was spending time with my grandparents and BBQ!

It was spinach, cranberries, TJ’s sweet and spicy pecans, raspberry vinaigrette and ff feta cheese. Basically everything was from TJ’s (except the spinach, but you can get that there too).

Thanks!! I’ll have to see what I can find. I live in a small town with a WalMart and that’s it! I had never even heard of Trader Joe’s until I started reading your blog.

My weekend highlight was going to by first belly dancing class. It was fun full of women of all sizes. I am hoping it will help me with the goal of loving my body even though it’s doesn’t look the way I’d like it to.

My weekend high was coming in 3rd in my division at my 5k, 12th out of all the females and 60th overall out of 570ish people! Wootwoot! And while wearing bunny ears!

My highlight was watching my husband try to make a homemade kite and fly it. 😉 I am sure my grandmother’s neighbors had fun watching as well.

Love the dress! I always feel so old shopping in Forever 21 but they always have the best things!! Weekend highlight was watching my daughter and nieces in a egg hunt….so cute!!

Running highlight was managing three days in a row of running. 5,6 and 4 miles respectively. After dealing with a 7 month long ankle sprain/tendonitis it was the first time I managed three in a row with no repercussions. Yay.
Non running highlight was heading to the international auto show here in NYC with my nephew, brother and father. I enjoyed watching my nephew get in each car, and smile. And I fell in love with a jeep wrangler that smiled back at me. Lol.
Food highlight/lowlight was buying a big lattice blueberry pie and eating the entire thing in 3 days all by myself! Yikes!! Guess that goes on my trigger food list.

I was actually going to comment on how I liked your dress. I am not big into fashion either. I need to work on that since I am getting older and looks even worse. You are plenty young. You see all ages in Forever 21. More is about the choice you pick I think.
