I Made My First Brunch All By Myself

Hello! I just made a big epic brunch all by myself! Well, 98.2% by myself.

I’m over here in Florida running and eating. It’s an annual trip Ben’s family does. They have a bunch of cute traditions, and one of them is going to brunch at one of the hotels on the island. Well, the restaurant is closed for renovations. While looking for alternatives, I ended up scrolling through travel recommendations and somehow landed on a discussion about new betting sites that have been gaining popularity among sports fans. Not exactly brunch-related, but it was an interesting rabbit hole to fall into. #BrunchFAIL

So last night I volunteered to make brunch for everyone in lieu of us scrambling trying to find a new restaurant.

Except I’ve never made brunch before. Actually, I don’t think I’ve ever even made a complete fancy meal for 12 people before!

Monican, what did you get yourself into?!

Luckily I have this thing on my phone called “Google”. And this Google thing is awesome and you can search for anything in the world – you should definitely download it.

Anyway. I found a ton of breakfast casseroles – who knew the internet is full of recipes and food porn?!

And since I am lazy/smart/love food I chose two casserole recipes that you can prep the night before and bake in the morning! Perfect.

I made a savory egg and hash brown casserole based off this Overnight Sausage and Egg Bake. I used some random ham and more hashbrowns (just because the bag had more than required). Everyone loved it!

And I made this Cinnamon Roll Casserole. Ah-mazing. Seriously.

After my run I popped the casseroles in the oven and cooked up a bunch of pancakes. It was easy, but looked super impressive.

    That cinnamon roll casserole looks amazing.. I’d be scared to know how many miles it would take to run it off though 🙂

    Breakfast foods are my favorite. It’s not uncommon for me and my husband to have breakfast for dinner during the week. This morning, I had leftover homemade chocolate chip waffles, which I added blueberries on top to make it seem somewhat healthy.

    Good job on the buffet of breakfast!!! Looks delicious!

    That looks like an amazing brunch! Especially the cinnamon roll casserole. My breakfast was leftover mexican chicken bowl – chicken, blackbeans and rice. I wish I would have known I was going to be called off work so the running could have happened before the breakfast bowl but all went well in the end 🙂
    Are you running the RNR Vegas race this year?? I’m looking forward to it. Vegas is always a good time!

    You go! Overnight casseroles are the way to go when you have a ton of people to feed in the morning. No one likes to wake up super early and slave over a stove!

    Peanut butter and banana toast and a yogurt. I am a creature of habit and this is my weekday breakfast pretty much every Mon-Fri.

      I can seriously eat the same thing for B, L and D every day. It’s funny that it’s kinda normal to eat the same thing for breakfast every day but if you eat the same thing every day for dinner people think it’s weird 🙂

    Those are some seriously thick pancakes! Nice work, Monica. I was in Florida over Memorial Day with family and it was SO hot. Now I’m back in the Bay Area and we’re having a heat-wave too! Ahhh!! Have fun:)

    Yummy!! I don’t think I could handle more than my husband to serve b/l/d! Impressive! This morning was greek yogurt with blueberries, pb, honey and a Kind Bar broken into pieces with a drizzle of honey! I consumed this out of the pb jar… #classy
