Easy Muffin Recipe for One
Hello! I just made the easiest oatmeal pumpkin muffins of my life. You probably have all the ingredients in your kitchen right now. Try it and let me know.

Before we talk about those muffins, let’s talk about running.

This morning I did 6 miles and some post-run exercises for my lil POTM for the day. What are you doing?

And now it’s time for this super delicious pumpkin spice muffin recipe. I have been craving a pumpkin muffin but didn’t want to bake (and eat) a whole batch. I made this recipe for one muffin using ingredients I had on hand. The best part is – it came out so good! I made the recipe again to make sure it worked for one or two muffins and could be doubled too. Yep.

So make one muffin for a snack or double it and make one for yourself and one for your cat.
Then, when he turns up his nose at it you can have two muffins. Boom.
Super Easy Pumpkin Oatmeal Muffin – for One
(Easy – Low-fat – Recipe for 1 – Gluten free)
Ingredients for one Pumpkin Oatmeal Muffin:
- 1 packet maple brown sugar oatmeal (use gf oats if needed)
- 1/4 c pumpkin puree (canned)
- 1 egg
- 1 tsp each: pumpkin pie spice & baking soda
- dash: salt
- 2 packets stevia or sugar
Directions:
- Pre-heat oven to 350 degrees.
- Place all ingredients in blender and blend.
- Pour into a cupcake pan sprayed with non-stick spray (or muffin cup).
Optional: Top with oats, dried cranberries or nuts. Bake for 15-18 minutes until set.

Double or triple recipe if you want extras for tomorrow. I made the recipe with one BIG muffin and made a batch with two smaller ones. Adjust baking time as needed.

Today i ran a couple miles & did an upper body lifting class
Long walk with my dog and an hour of riding my horse!
Walked 90 minutes over three walks.
Yesterday my internet connection didn’t work, anyway I did 2 km run and a Pilates class:)
20 mins of running plus some yoga!
2 miles
Nothing. I was at work and then I went to the hospital to see my new nephew. I am hoping to do something tomorrow.
I worked out with my trainer, and ran a mile and a half! That’s the furthest that I’ve run since I got out of my boot last week. I’m pumped!
Body Pump this morning and then 3 miles
Last rest day. Tomorrow I will be back to exercise.
I probably could’ve done something today, but I worked a 12 hour shift and didn’t want to wake up sicker.
I ran 6 miles yesterday at half marathon pace.
3.5 miles for me.
3 miles on the treadmill in .5 and .25 mile repeats.
30 minutes on the treadmill today!! Those muffins look awesome!
I did spinning for 45 minutes with abs and then 1 mile on the treadmill.
I did 3 miles, then we hopped in the car for a 3 day road trip in route to my sister’s house and our half marathon on Saturday. About an hour into our drive, i realized i forgot to pack my running skirt for Saturday. I was/am majorly disappointed. Then when we got to our hotel, I realized, i also forgot my swimsuit. Sigh.

Ran six miles at the gym, hurried home for dinner, homework, etc with my kids, showered, and am now stretching in bed while I catch up on my fave blogs:)
5 miles today…plus arm work. Speaking of which, YOUR arms look so cut in that picture! Sigh, envious 🙂
Despite my bruised toe from the cleating I took last night… got my 10,000 steps in.
I was in a time crunch.. with a 30 min window I was able to get in my scheduled 3 miles.
Those muffins look delish! I took a rest day today but back at it tomorrow!
TO’Day was 2 miles on the treadmill then bench pressing/ superman flying a toddler for a bit!

Today I did a circuit of running, lifting, & stepmill, then finished with some stretching.
Ran 5 miles tonight and killed my shoulders at the gym. Fun day!

I’ll have to shop for ingredients. Those look yummy. I did a half hour in the elliptical at lunch time . I also did a self defense class tonight. I broke a sweat even though it didn’t seem super intense

resy day today but took my dog for a long walk even though it was freezing out!
I got my 22,000 steps in today! I used the elliptical for 15 minutes and walked 2.4 miles on the treadmill. The rest of my steps are from walking to and from school and teaching and walking at lunch. I will be sad when the cold weather hits and I can’t walk to school anymore. Chicago winters are cold and snowy!
I did 5.5 on the treadmill today.
I knew I wouldn’t have time after work to do anything, so I got up a little earlier and ran 4 miles before work. It went well…but it was VERY DARK!!
8 miles today, on the back roads, at an easy pace. My scraped up knee is still pretty sure and my bruises are quite “attractive”. But hey, I consider them like trophies from my hiking adventures. 🙂

POTM check in: 5X800 with a total of 5 miles. My first 800s in a while and they went better than I thought. So far I have 50 miles done this month, so well on my way to the 75-mile goal I set!

Today is a rest day for me, getting over a stomach bug
I think it would work to cook it through (so the egg isn’t raw) but won’t be as fluffy. The slower baking from the oven made it the consistency of a muffin. I feel like mug-cakes have a little bit a different consistency.
Today I ran 6.6 miles! It felt great and I was happy to get it in before work!
Planning on a 2 mile walk today.
This morning I did 4.3 km! So far this month I’ve gotten in 40.3km out of my 75km goal. Woohoo!

30 minutes on the rower followed by 4 miles easy run. 10K this saturday!
I woke up extra early, not on purpose, but wanted to move. I started at the gym, did 30 minutes of cycling then when the sun came up I got my 5 miles in running a loop out and back to the gym. 10 out of 25 miles for the week yay!
40 minutes of cross training and some core work!
Today was supposed be a 7 mile run, but I overslept a little bit and had to cut it down to 5. I’ll make up for it tomorrow!

I did 3 miles of run/walking because I’m getting over a nasty cold. It felt pretty good to get outside!
Another 4 miles although I really wanted to go back to bed.
This morning was a ladder workout at the track! I didn’t want to get out of bed, but I pushed through and I’m so glad I did. The sunrise was amazing and I felt so much better starting my day with a workout 🙂
7 miles on this foggy morning, have to start doing some intervals tomorrow in preparation for the annual Turkey Trot!

Got all my miles in this morning! Walking, biking, elliptical, arms, and abs! Circuits of a little bit of each so it wasn’t mind-numbing!

Spin tonight — the average 45 minutes spin class covers 15-20 miles, so I’m told… I’m lowballing it and will consider it 15 miles down.

Hit the gym this morning for some AirDyne intervals, wall ball shots, sled pushes, and some plyo work. WooHoo! Nice and sweaty first thing in the morning.

Got my walk in early today, plus some yoga after. My back feels *amazing* after two yoga sessions this week.
My hip said no thank you to. Run yesterday, but I didn’t listen. So it’s punishing me today. Gonna be a rest day.
