Hello! Happy Monday! Are you ready for a fresh new week? I love Mondays (mostly because I can tell myself all the stuff I ate over the weekend is behind me and I get to start over with a clean slate). Busted!

I know this is no surprise to my faithful readers, but I am a big snacker. My nickname is actually Snacky McSnackerson. (Okay, that is just a nickname I gave myself, but  I think that’s what my cat calls me in his head.)

And I like a legit snack –  something that is filling and delicious and easy all at the same time. I eat hummus fairly often since it hits all those requirements. I never get sick of it, but today I added something to get in some more protein and make this the best snack combo ever…

I used Sabra’s original hummus and topped it with a few hardboiled eggs and some salt and pepper. Hummus already has fiber and protein from the garbanzo beans, but this really ups the protein and makes it a perfect post-run snack too.

Also, I realized that plating the hummus might trick people into thinking I made it which would be awesome.

But I’m pretty sure:

A.) No one would be fooled since I’ve made homemade hummus before and it’s no where near as smooth

B.) I am the worst sneaker and would immediately just tell everyone (like when I have a spray tan and just tell everyone so they don’t think I’m actually coming back from a beach vacation)

Bonus: This would be a great Meatless Monday lunch option, especially paired with some whole grain bread. Enjoy!

      Hummus with hard boiled eggs. I’m going to try it. Great idea. I love hummus too. I’ve even considered making my own, but sometimes you just have to enjoy what you can buy without the fuss of making your own. Pea pods, carrots… Definitely going to make it happen.
      My favorite snack on the go is Nature Valley Protein Bars. They have 10 g protein with just enough carbs to give me a boost.

      Brilliant! Am I the only one that thinks it’s weird not to have at least two eggs a day?? Thanks for the hummus snack tip. PS. Sabra is the only hummus that I will eat. It’s the best!

      I snacked on homemade chocolate covered granola bars, hummus and crackers and then left over Easter Eggs
      Did you enjoy the hummus in Israel? I loved it and it was so cheap! I particularly liked how you could but it in 1kg tubs

      Forget meals, I could snack all day. So good!

      Today my snack was boring, Baked Lay’s. I’d rather have hummus!

      I love snacks! I really love hummus too, and I’m definitely going to try some with eggs on it! I think that would make a great small meal. I’m the same way about the weekend. I just kind of forget to eat healthy and just enjoy myself! Then I start over Monday morning!

      I ate chickpeas too but smashed up with PB and choc chips with a side of strawberries, so good.

      I’m definitely the same way. Glad to know I’m not the only one! I usually do pretty good on Saturday with a good workout in the morning and somewhat healthy eats, but come Saturday night and Sunday, it seems to go downhill and then I feel really guilty and beat myself up a little until I can get my next workout in. :/

      yum! I love hummus.. I usually make it myself when I have the time. I am a huge snacker too. I had a greek yogurt with raspberries, peanut butter and honey today… so yummy!
