Banana Bread French Toast

What do you do when you baked a delicious loaf of banana bread, but know it’s just going to “disappear” on the counter with countless “little” bites?

Make Banana Bread French Toast!

This way you can actually savor it. Plus,  it’s an excuse to pour syrup on something.

I dipped the leftover bread slices in an egg mixture of: 2 eggs, splash vanilla, cinnamon, milk and maple syrup. Cook and top with PB and syrup. IMG_7798

I have had really bad runs  all week (ha, that sounds bad).

I can’t figure it out, but I’m thinking maybe it’s because I’m not refueling fast enough and well enough after a run? So I’m going to try focusing on eating within 30 minutes after a run and see if that helps.

    Great idea!! Too bad banana bread doesn’t last long enough in my house between my son and husband to make this. I just made a loaf yesterday and I think there’s one piece left??

    Don’t give up on your runs! You’ll get there….

    Umm…what a great idea for banana bread, although I will say it gets eaten so fast in our house, I’m not sure we’d have any left for french toast:)

    OHMYGOSH. I can’t believe I’ve never thought about making banana bread french toast before — you’re brilliant!

    Hope your runs improve. I often find that if I don’t stretch well enough after a run, the next time out I really pay for it…

    Wow that does look good! But did your hubs not take it to work? I remember you said he was being a weenie about it, lol! It served a much greater purpose anyway. I have some ripe looking bananas on the counter so I might have to copy you!

    I hope your runs gets better soon! The weather here in MD is supposed to be pretty nice for the next few days. Hopefully the sunshine will motivate your runs and leave you feeling refreshed!

    I also agree to chocolate milk post running. yummm.
