Banana Peanut Flour Muffins

Answer: Happiness, that’s what. IMG_1395Or you could call it  Banana Peanut Flour Muffins, it’s up to you.

Recipe:

1 c. Whole wheat flour

1c. Peanut Flour

1/2 tsp. salt

3/4 tsp. baking soda

1/2c brown sugar

1/2 Greek yogurt

2 eggs or 1/2c egg beaters

1 1/2 c. mashed ripe banana

1/3 c. almond milk

1 tsp. vanilla extract

Directions:

Heat oven 350 degrees.

Mix flours, salt and baking soda. In a separate bowl combine greek yogurt and brown sugar until combined thoroughly. Add eggs, banana, vanilla and almond milk. Combine dry and wet ingredients.

Spray muffin pan with non-stick spray. Scoop mix into pan. Bake for about 18 minutes (keep an eye on them as my muffins were big).

And now you’ve got freshly baked banana peanut muffins hot out of the oven!

They needed a little something so I frosted my bites with chocolate almond butter. IMG_1402

Since today is Confession Thursday,  I have to confess I added chocolate chips to the remaining batter and baked it as a tiny loaf. I meant to share some with Ben, but it was too good. Sorry Ben. IMG_1405

Earlier today I had lunch at home between school and work. Since I already knew what I was making for dinner I decided to make part of it right then so dinner prep would be easier.

I squeezed the water out of tofu yesterday…IMG_1377

and today I topped it with a mix of soy sauce, garlic, Sriacha, and a random dressing. Then, I baked it at 350 for about 30 minutes.IMG_1378

They came out so amazing I ended up eating three pieces before heading to work. Um, I guess I can call it a snack? IMG_1384

Since I basically ruined my dinner by eating it earlier I ate leftovers from last night and ate muffins for dinner.

Random snacks at work – cucs, carrots, grapes and trail mix. My snacks were as exciting as my work. Fabulous. IMG_1386

      I keep seeing recipes with peanut flour and initally i was hesitant but everything sounds just so good, and as a peanut butter fanatic I think I’ll have to jump on board.

      I watch all TV on my DVR now. I can’t stand watching commercials! If I get into something that’s on at the moment and a commercial comes on I immediately press record and finish it later. I have become completely impatient! lol

      So last night my husband and I watched the SVU’s from Wednesday night.

      Oh yum! I almost never cook with tofu because I simply don’t know how. But, that looks delicious. I am going to have to try baking tofu next week.

      My roommates and I don’t have cable (we opted out so we don’t get distracted from studying!) So, instead, I watch old episodes of shows via Netflix. I’m now watching The Wire. I figure it’s only appropriate after just moving to Baltimore, right?

      You’re so resourceful! 🙂 Confession: I usually buy more bananas than I know I will ever eat just so I have a reason to bake something with them. 🙂

      Greys last night!!!! Although I did fall asleep for the last 10 min. Nuts, that always happens to me. 🙂

      I never thought about doing that with tofu before. I will be sure to try that out and those muffins look delicious.

      I have tivo so I recorded The Office, Community, CSI, Outsourced (watched that already and pretty good show), SH&t my dad says (kinda dumb).

      I just finished Grey’s! I. Love. That. Show. I’ve never been one to get into a show, ever. But Grey’s, wow! This season is gonna be a doozy.
