Hello from the sky! I’m on a plane on the way to San Francisco. Another day, another flight.

Sadly, I had to say good-bye to Florida today. It was very very very nice while it lasted though…

And now I’m on a plane reading Eat, Pray, Love – or as I call it, “White Girl Problems Part II”. We’ll discuss later.

Before I forget – I wanted to share this healthy vegetarian, gluten free, happy happy recipe for Brown Rice Salad. I made it the other night and can’t wait to recreate it. This is a super easy summer-y dish that can be served cold, room temp or piping hot. brown rice peanut salad Brown Rice Salad with Peanut Sauce {vegetarian. gluten free. food.}

Brown Rice Salad with Peanut Sauce
Ingredients:
2 packages microwave brown rice (or the quick cook kind)
1 can beans of your choice – except jelly beans
1 can green peas
1 package Asian slaw mix
1/2 cup peanuts
1 cup peanut dressing – I used that Tamari *Gluten Free sauce below
Sriracha – optional, kinda.

Directions: Make brown rice according to package directions. Mix all ingredients. Season with salt and pepper to taste. Let set an hour or more (you can make this the day before and stir before serving).

Enjoy!

BONUS: The next day I cooked it up with eggs and extra coconut aminos (like soy sauce) to make a brown rice stir-fry! *Note: soy sauce has gluten, so use a substitute if needed.

Supper yesterday was 2 hard-boiled eggs and chocolate milk from a gas station after my run and then a couple pieces of pizza when I got home (at 8:30). Long day, lotta miles. Thankfully I fueled during the day!
Leftover shrimp & pasta from last night’s 19th wedding anniversary dinner. Which is perfect because I need to start carb loading for my next race anyway!

Do you like Eat, Pray, Love? I actually didn’t and so many of my friends went on and on about how it changed them and such nonesense, I’m sort of hoping I can find at least one other person who wasn’t a fan?

I HATED Eat, Pray, Love! I read it for my book club, and most of us were underwhelmed by it. You are not alone!
Update – I’m having the hardest time finishing it. I am not digging it.
Last night we had salad, home made pizza and lots of fruit! With summer here I have been on such a fruit kick lately!
such a fan of Quest bars. the cinnamon roll is my fave. my dinners are soooo all over the place — i rarely ever cook and really need to more. i have a lot of salads!
I never know what I’m having for dinner until noonish. I like to be spontaneous…see: I’m too lazy to prepare. 🙂
That salad sounds delicious! I made a similar salad with brown rice, roasted corn, edamame, onion, bell pepper, and cilantro. The mexican-ish version of your salad. 🙂

Funny thing, I ALSO called that book the same name. I couldn’t even get to the LOVE part. Dinner was a big salad of romaine lettuce, cucumber, tomato and avocado with a splash of vinegar. I put a few sliced of turkey and and handful of sea salt potato chips on top. Paired it with a glass of wine 🙂
Overnight rice (taken out from fridge just before cooking) is good for fried rice.
Does that Asian mix have cilantro in it?
