Hello from the sky! I’m on a plane on the way to San Francisco. Another day, another flight.

Sadly, I had to say good-bye to Florida today. It was very very very nice while it lasted though…

Running pose in the water. Because no one is around and I’m incapable of acting cool.

And now I’m on a plane reading Eat, Pray, Love – or as I call it, “White Girl Problems Part II”. We’ll discuss later.

Before I forget – I wanted to share this healthy vegetarian, gluten free, happy happy recipe for Brown Rice Salad. I made it the other night and can’t wait to recreate it. This is a super easy summer-y dish that can be served cold, room temp or piping hot. brown rice peanut salad Brown Rice Salad with Peanut Sauce {vegetarian. gluten free. food.}

Enjoy!

BONUS: The next day I cooked it up with eggs and extra coconut aminos (like soy sauce) to make a brown rice stir-fry! *Note: soy sauce has gluten, so use a substitute if needed.

Question: What are you having for dinner?

I’m having a salad I packed and 2 Quest bars. Maybe three.

Thank you for the quick and easy weeknight dinner! I’ve made this twice in the past two weeks and it’s awesome! I omitted the peas the second time and doubled up on the asian slaw. Such a great idea for a refreshing summer meal, thank you:)

Supper yesterday was 2 hard-boiled eggs and chocolate milk from a gas station after my run and then a couple pieces of pizza when I got home (at 8:30). Long day, lotta miles. Thankfully I fueled during the day!

Leftover shrimp & pasta from last night’s 19th wedding anniversary dinner. Which is perfect because I need to start carb loading for my next race anyway!

Do you like Eat, Pray, Love? I actually didn’t and so many of my friends went on and on about how it changed them and such nonesense, I’m sort of hoping I can find at least one other person who wasn’t a fan?

      Elizabeth,
I HATED Eat, Pray, Love! I read it for my book club, and most of us were underwhelmed by it. You are not alone!

That salad sounds delicious! I made a similar salad with brown rice, roasted corn, edamame, onion, bell pepper, and cilantro. The mexican-ish version of your salad. 🙂

That salad looks delicious and perfect for *on-the-go*!

We are meeting up with the speedwork crew this evening, which means we go out for burgers and beers for dinner afterward. 🙂

Funny thing, I ALSO called that book the same name. I couldn’t even get to the LOVE part. I. am .sorry., I cannot feel bad for a woman that has the opportunity to go on a funded trip around the damn world. She’s sad, LIFE HURTS get a helmet. I am not trying to be unkind, but I just couldn’t believe in her #StrugglePartyOfOne mentality. lol

Just popping in to say that I discovered your blog about a week ago and I love it! You are an inspiration, I admire your running skills and love your yummy food pics. I even made a post about it on my own little blog. I hope you don’t mind 😀 I’m not a creeper I swear.

Dinner was a big salad of romaine lettuce, cucumber, tomato and avocado with a splash of vinegar. I put a few sliced of turkey and and handful of sea salt potato chips on top. Paired it with a glass of wine 🙂

Overnight rice (taken out from fridge just before cooking) is good for fried rice.
