Happy First Day of Spring! I’m glad you’re here reading and I didn’t get cut in your online Spring Cleaning…
Just like I promised myself I took a rest day today and just did some abs and a walk. Plus 2 rounds of the Strength for Runners session.
But, I’m still just tired overall. Not sure if it’s because of the races or because I’m dying of some rare disease…
Anyway. Before I go I have to share this healthy chocolate dessert with ya…
I randomly wanted a treat this week and didn’t have anything good in the house. I decided to finally try and create the Chocolate Banana Muffins I’ve been dreaming about in my head movies.
I feel like not enough healthy recipes have chocolate in them! What’s up with that?! I mean, chocolate is good for you. It’s science. It has anti-oxidants and junk.
Plus, it’s good for your happiness.
Chocolate Banana Muffins Recipe
{healthy. gluten free. chocolate.}
Ingredients:
- 2 ripe bananas <- riper the betta
- 1 egg or 1/4 cup egg whites
- 1/3 cup nut butter
- 2 Tb. cocoa powder <- add more if batter is too watery
- 1/2 tsp each: vanilla, salt, baking soda
- optional: 1/3 cup chocolate chips
Directions: Smash up bananas. Add egg & nut butter. Mix well. Add rest of ingredients and combine. Optional: add chocolate chips. <- I chopped up a dark chocolate bar just because I felt like it needed it. But, I made one of the muffins without it and that one was good too!
Pour into sprayed non-stick baking cups. Bake at 350 for 15-20 minutes or until set.

Ooooh those look great! Perfect runner fuel! I have to knuckle down and fine tune my fueling as my big races are coming up and I need to perform. These will be great as a treat I dont need to feel guilty about! Maybe using my homemade cashew butter for a change 🙂

Spring is actually trying to make an appearance here today but there is snow in the forecast for next week so f that. Guess I will enjoy the weekend before it is ripped away from me again.

The spring here is more like winter 🙁 Boo! However instead of the snow we do have rain, so I guess that is more springy!? This recipes looks insanely delicious and easy! Totally trying it out!

Is 1/3 cup chocolate chips optional because its optional to use more than that? Anyone who completely skips the chips is loony.
Unless the polished off the bag before it was time to add them to the recipe. Then its understandable.
