Do you guys have any big plans for this Easter weekend?

Unfortunately this is the first holiday that Ben and I are flying solo. We’ll just hit up church and lay low Sunday. I did pick up some special dinner supplies for a yummy meal.

Last year I made a cake in the shape of a bunny. And we went to a family party.bunny cake

Now I want a piece of cake! I better pic up some dessert when I go out. Yum!me with bunny cake

After Kickboxing I was hungry and ate an apple on the way to the store.IMG_6790

Shopping hungry is never a good idea because stuff like this may end up in your cart…IMG_6791

When I got back home it was close to 2pm and I ripped into the Food Should Taste Good chips while throwing lunch together.

I made a big salad with chickpeas, hummus and veggies.IMG_6793

And a piece of cheese bread on the side! I just melted a piece of cheese on quinoa bread and put it in the oven for five minutes. So easy and delicious.IMG_6795

Note: I buy the biggest can of chickpeas from Costco and sometimes freeze some of the them for later. The freezing and thawing changes the consistency a bit. The outside seems to peel off on a lot of them and they are squishier.   I like them with more “bite” to it, but at least they didn’t go bad!IMG_0042

Everyone is in such a good mood – I think it’s because of Spring Break! I felt celebratory and had a chocolate 🙂IMG_6796

Good for you! Trying to ditch a soda habit is really hard!!! I have one too! I use a BPA free water bottle (the big one) and try to drink tons of water, and when I get bored with plain water i have some with Emergen-C, or some fresh lime, or some flavored green tea!! So what are the big weekend plans around here?

I feel like I should at least dye eggs or something! But, I don’t think baking a cake for just Ben and I is a good idea…so no bunny cake this year…

    I laughed when I saw the picture of the Chocolate covered Pom’s, which I ALMOST picked up on my last trip to Costco.
    They weren’t handing out samples so I didn’t get to try them, which I’m glad… because I really don’t need them in my life especially a bag of that size!!

    I have big plans! my vineyard-owning french family is coming to the states so I’m heading to my aunt and uncle’s house to see everyone! and this is no ordinary house, it is a historic plantation farm house built in 1795. and did I mention my aunt is a gourmet chef? swoon. my french family makes champagne, specifically, so I suppose we’ll decorate eggs while drinking heavily…

      It’s a trick. They use pomegranate juice to be a chewy candy and cover it with chocolate.

    OMG! Those chocolate covered pomegranate things are so addictive. We used to have a bag around and we called it chocolate covered crack. You will not be able to put that stuff down.

    I don’t celebrate Easter so I imagine my weekend will be the same as every weekend: work out, hang out with the boy, catch up on TV. I am excited about the gym being empty on Sunday!

    i’m so lame…we’re going to church and then we’re spending Sunday afternoon smoking brisket and making Easter dinner! we are always around others over holidays though and i think it’ll be nice to just be alone with my sweetie!
