Egg Salad Sandwich

I have been craving hard boiled eggs and last night I boiled a few for lunches for the week. Today I made the classic – Egg Salad Sandwich.

The filling: One egg and one egg white mixed with mayo, mustard, salt, pepper and chopped onion. You can’t go wrong with  an old favorite like this…IMG_1041

This sucker was messy though! Most of the filling fell out. I don’t think sandwich thins are the best vehicle for getting egg salad into your mouth.IMG_1040

An apple for the road – now I’m off to class! IMG_1043

    Not a huge fan of egg salad, but sometimes those cravings just hit with vengeance. It’s definitely messy!

    My mom use to make Egg Salad all of the time. My favorite was when it was still warm and freshly made. 🙂

    Yummy! I add dijon mustard instead of plain yellow. It gives it a little more kick.
