I guess I missed cooking while I was in Panama because I was smiling in the kitchen while cooking and baking this afternoon!

I have been wanting to bake for a while and decided to throw together a pumpkin bread to satisfy the craving.healthy pumpkin butter

Healthy Pumpkin Bread Recipe

Ingredients:

  • 1 cup pumpkin
  • 2 eggs or 1/2c egg whites
  • 2 Tb. peanut butter (heated till soft)
  • 1/4 tsp vanilla
  • 1/2c white flour
  • 1/3c whole wheat flour (pastry)
  • 1/3c stevia for baking OR brown sugar
  • 1/4 tsp each: pumpkin pie spice, salt, baking soda, baking powderhealthy pumpkin butter recipe

Directions:

1. Heat oven to 350 degrees

2. Mix first 4 ingredients. Mix the dry separate. Combine the two.

3. Pour batter into a well greased pan.

4. Bake for 35 minutes.

I had to work from until 8pm this evening so I made dinner early. I was excited to bust out my new Costco pan. You’re supposed to use it everyday. Guess this means I need to eat cereal out of this thing if I don’t feel like cooking!IMG_1906 (800x533)

I cooked up a spaghetti squash in the microwave while using the Everyday Pan to cook up ground turkey, onions, tons of garlic, green beans and sauce.IMG_1909 (800x533)

Is it sad that I think I’m the biggest (and possibly only) fan of my own cooking? Yes, yes it is.IMG_1927 (800x533)

But, I had to rush off to work before eating so I grabbed a piece of pumpkin bread and called it a snack.

I’m not sure if it was hunger or what but around 7pm I got the WORST headache. It was all the way down to my neck. Boo.

I got through my last client and rushed home before taking a handful of ibroprofen with a vodka chaser.

Actually, I didn’t do a vodka chase, I did a dinner chaser. Now I feel 80% better.IMG_1929 (800x533)

Now I’m sipping on tea while blogging to you fine folks. And by ‘sipping tea’ I mean – polishing off a whole loaf of pumpkin bread. Oops.

And by ‘blogging’ I mean – attempting to ramble in a coherent fashion while I research migraines on WebMD in another tab.

    Peanut butter in as a pumpkin bread ingredient? Sounds good to me! Does the taste come through?

    Also, your dinner looks REALLY good–and like Chinese food!

    I pretty much never get headaches, so I’m no help in this department. But hope you’re feeling better this morning! Hopefully the food helped, and be sure to drink some water. 🙂

    I have that Costco pan, and I freaking LOVE it. I use it constantly. And it was SO cheap.

    Headaches are the biggest bummer. I get them when I’m dehydrated or super hungry. Sometimes food is the only cure. Ok, that applies to almost anything else too.

    I had a headache last night too…but I think it’s because I was drinking wine on an empty stomach. Oops. And I still have it this morning…maybe some pumpkin bread will help!

        Turned this recipe into muffins with a few modifications. Turned out amazing!!

        Here are my changes:
        • Added one large super ripe banana mashed
        • Used 1/4 cup stevia for baking
        • Topped with toasted pumpkin seeds

        It made 12 muffins. Baked for 20 minutes at 350 degrees. Yum! Thanks for the recipe inspiration 😀

    I hate headaches, I get migraines all the time and I can feel them coming on and no matter what I do I can’t seem to stop them, it’s always SUCH a downer cause I know it’s coming yet I can’t seem to stop it. Very upsetting. That pumpkin bread looks so delicious.

    amen. i get hunger headaches sometimes too and they’re the worst. especially during bball season because my metabolism is REVV’d.

    I have had the worst headache for the past 4 days! It started as a migrane and now is slooooowly leaving. I researched the same, on WebMd, and basically it said I had a brain tumor and I was bleeding in my head. So be careful what you read!!

    I always have the urge to cook after returning from vacation. The bread looks good! Glad this one was recipe worthy because I’ve been looking for an easy but good pumpkin bread to make.

    Sorry to hear about your headache. Normally if it hits your neck its a tension headache. Stressing from working after a relaxing vacation?
    Dinner looks delicious. I have yet to tackle a spaghetti sauce, but I like the idea using the microwave.
