Hummus and Veggie Stuffed Omelet

I am extremely obsessed with loyal to my favorite foods. So, I try to justify having them for any and all meals.

The list of my favorite foods goes as follows: watermelon, eggs, fro-yo, tequila, hummus, pizza, dark chocolate. (Not in order, but kinda.)

I make a huge effort to have at least two of these foods for every meal.

Exhibit A: watermelon margaritas

Exhibit B: chocolate chip omelets

Yes. I went there.

I love putting hummus on everything my eggs. But a big ol’ dollop of Sabra Roasted Garlic hummus on eggs, isn’t the most photogenic food in the world. So, it turns some people off.

Luckily, a hummus filled omelet is delicious and pretty and easy to make!

Hummus and Veggie Stuffed Omelet

{gluten free – vegetarian – high protein}

Ingredients:

  • 1 egg and 3 egg whites
  • 1/2 cup chopped veggies of your choice
  • Salt and pepper
  • 2 Tb. Sabra hummus (or more!)
  • Optional: Ketchup, Sriracha, cheese

Directions: Cook veggies until soft and set aside. Spray pan with non-stick or butter. Whisk eggs and put into pan, cook omelet though. Spread one side with hummus and veggies. Fold over and serve.

Top.

    Actually, I’ve never thought of eating hummus with my fried eggs – I loved eggs and I enjoy hummus, but never thought of combining them together!

    I love your idea! Will do it soon =D

    Looks really very delicious. But I’ve never eaten hummus, to be honest. But I like to cook omelet with various vegetables to have a healthy breakfast.

    i’ve had a dollop of hummus along with a couple hard boiled eggs on top of my salad before but never used hummus with cooked eggs. I love hummus for its creamy factor so i’m guessing it might even make the omelete feel like it had melted cheese inside….

    Ummm, no. Haven’t tried that. But I do love eggs…and hummus. Strange combo but I may just have to give it a chance.

    Yes! Instead of mayonnaise for an egg salad sandwich, I’ll use red pepper hummus. Delish! imho…

    Um, I put hummus on my eggs every time I eat them unless i’m at a restaurant. Thought I was the only one until I found your blog.

    This is genius! Would this work as a boxed lunch option too? Maybe if you brought the egg, hummus, and veggies in separate containers, reheated the eggs and veggies, and added the hummus? Worth a try! I’m always looking for some variety in my lunches 🙂 Thanks for the great idea!
