Happy week! How’s it going so far? Did you plan out a healthy, happy, productive week for yourself?

happy monday

I’m actually staying on task okay but am a little overwhelmed about it all none-the-less. At least it gives me an excuse to yell at my cat when he walks across the room too loud, right?

I took my new Mizuno Wave Sayonara 2s for a run this morning. Since I did the half marathon yesterday it was just a 4 miler just to get all warmed up and then stretch. I usually wear the shoe that is one step lighter than this one, but I did like the feel of these.

And now that the weekend is over it’s time to get back on the wagon. Donuts are a thing of the past… (or Saturdays in the future)

Breakfast was eggs. I love that F3 foods has so many egg options for breakfast.

Lunch was also an F3 foods meal – the Chicken Stir-fry is my favorite lunch so far. I put it on a salad for volume eating.

This was the Roasted Chicken Pecan salad from the other day. Just another illustration of the power of putting something on greens.

Question: What are you eating for dinner?

I have a few more meals to choose from that I’m pretty excited about.

I actually ended up having muesli and yoghurt for dinner as I didn’t get home until late after my run and just wanted something really refreshing and quick. Might do the same again for breakfast in the morning. 😀

Why is the “it’s a good salad” gif making me laugh? Seriously, funny.

I usually dont have time to cook at night bc I get home past dinner, but tonight is a date night and I picked up some salmon and asparagus. Now we just have to decide btw quinoa or brown rice. I could eat salmon everyday.

Yesterday I had my “big” meal at lunch: Leftovers from an ovendish my boyfriend made (cod, mashes potatoes, peas, carrots and some awesome seasoning). Very healthy and very tasty.

For dinner it was chicken breast with spicy sweet&sour sauce on crackers. I also chopped a few pickles and added them in. I had some trail mix after. Looking back on it apparently my hormones are giving me some strange cravings, TOM is probably arriving any time soon.

Pasta de Sardine, a big salad, and some garlic bread (gotta use up the extra sourdough). As for the pasta, don’t knock ’til you’ve tried it. I was skeptical at first, too – but it’s a fave of the Portuguese boyfriend and yes, I like it too. :o)

That meal plan looks really delicious. I’m trying Blue Apron, but you have to cook everything, which I don’t mind doing, but something that is pre-prepared that takes the fuss out sounds like a great idea for my busy life.

For dinner, my husband and I are heading out for a steak dinner at Mandalay Bay (we’re in Vegas until Wednesday!). I can’t wait to get my grub on. I’ve been eating as clean as possible all day (I don’t count the numerous beverages I had poolside in that clean eating description though) so that I can indulge a little more at dinner. Yum!

I had a bag o salad for dinner because I’m feeling super lazy. I followed it up with some berry cobbler that I made yesterday (when I wasn’t lazy), which was delicious.

I love the color of those shoes! I know that’s not a valid reason to buy them, but it is tempting! 🙂

I had a chicken stir fry with a salad for dinner. It was pretty good! Now I am about to go look through the cabinets again though 🙂
