Hello! How’s it going? I had a little house guest yesterday and then headed to my mom’s to return the Roxican to her best friend.

When I got home I was hungry and wanted a ‘treat’. I was craving something sweet, but didn’t have anything in the house.

So, I threw together this Chocolate Mug Cake in the microwave and then covered it in Cocoa Syrup. And promptly made a second one.

Cocoa Mug Cake Recipe:

Spray mug. Mix: 1 Tb egg whites, 1 Tb Almond Butter, 2 Tb. oat bran (or oats), 1 packet NuNaturals Stevia, big dollop Cocoa Syrup. Microwave for 1 minute and let set. Cover in cocoa syrup and go to town.

I was about to make a third mug cake when I realized I just wanted more of the syrup. The cake was merely a vehicle in which to get more cocoa deliciousness to my mouth!

    It’s gonna sound kinda nuts, but it’s legit! I’m on antibiotics so I’m eating a ton of soy yogurt for the probiotics. I had extra caramel sauce from cupcakes I made last week, so I’ve been making a fake flan and it’s freakin delicious!!

    i think brownies are my all-time favorite… i have a bad (?) habit of making them but not really cutting them up so i sort of just keep cutting off slivers here and there and before i know it the whole pan is gone!

      Another recipe we made was banana “ice cream”. Frozen bananas in food processor with cocoa nibs. Tastes like chunky monkey is you top with nuts!

    It’s been warm (for the pacific northwest) and browsing the ice cream aisle yesterday I discovered Yasso Greek Yogurt Bars. So so tasty! I got the raspberry dipped in dark chocolate ones. Gotta have the chocolate!

    My favorite dessert is blendtec “ice cream”! Take any kind of milk, sweeten with stevia :), add some vanilla extract or cocoa powder, and freeze in ice cube trays. Then put in the blendtec and you magically have ice cream!

    PB/Butterscotch bars:

    1 Tbsp peanut butter
    2 Tbsp butterscotch chips
    ~2 cups cereal of any kind
    Optional: chocolate chips

    Melt PB and b-scotch in the microwave ~30 sec
    Stir well
    Add in cereal
    Mix in a few chocolate chips
    Eat and enjoy!

    (The cereal is supposed to be Rice Krispies, but I use that, Cinnamon Toast Crunch, Frosted Flakes, Cheerios, etc. The only cereal I’ve tried and haven’t liked with the pb/bscotch is the Reeses cereal.)

    I make healthy hot chocolate in the microwave with unsweetened vanilla almond milk, dark chocolate cocoa powder and stevia! It is awesome
