Skinny Spinach Artichoke Dip Recipe
Ingredients:
- 10 oz fresh spinach, chopped
- 14 oz artichokes, drained & chopped
- 3.5 cups low fat Real California Cottage Cheese
- 1.5 cups shredded Real California Sharp Cheddar
- ½ cup diced onion
- 1 TB crushed garlic
- ½ tsp salt & pepper
Directions:
Loosely chop spinach and artichokes. Combine all ingredients in a slow cooker and set on high for 2 hours or low for 4 hours.
Stir well every 20-30 minutes to breakdown the veggies and cottage cheese.
Serve with your favorite chips, bread and veggies for scooping.
Optional: Transfer to a serving dish and top with more California shredded cheese. The heat from the dish will melt it or you can place it under the broiler for a minute to brown the top.
