Try this updated and light version of Spinach Artichoke Dip. It’s protein packed thanks to the secret ingredient: cottage cheese made with Real California Milk. And it’s super easy to make in the slow cooker!

This family friendly recipe is full of vegetables and delicious California dairy. You won’t miss the unhealthy restaurant version thanks to the healthy swaps.

Low fat cottage cheese is the base of this dip.

Did you know one 1/2 cup serving of low fat cottage cheese provides about 14 grams of protein? 

Protein and veggies come together in this dish to provide a delicious combination of protein and fiber to help keep you full. Dip in a whole grain cracker or piece of bread for additional nutrients.

Skinny Spinach Artichoke Dip Recipe

Ingredients: 

  • 10 oz fresh spinach, chopped
  • 14 oz artichokes, drained & chopped 
  • 3.5 cups low fat Real California Cottage Cheese
  • 1.5 cups shredded Real California Sharp Cheddar 
  • ½ cup diced onion
  • 1 TB crushed garlic
  • ½ tsp salt & pepper

Directions: 

Loosely chop spinach and artichokes. Combine all ingredients in a slow cooker and set on high for 2 hours or low for 4 hours.

Stir well every 20-30 minutes to breakdown the veggies and cottage cheese.

Serve with your favorite chips, bread and veggies for scooping.

Optional: Transfer to a serving dish and top with more California shredded cheese. The heat from the dish will melt it or you can place it under the broiler for a minute to brown the top.
