Lunch for a snack

Even though I wanted a PB&J for lunch I decided to make a big salad because I have so much produce! The goods: spinach, tomatoes, bell pepper, shredded carrot, mushrooms, garbanzo beans, peanuts and TJ’s peanut dressing. It was so filling and delicious. I think eating salads with a bunch of topping is the lunch/dinner equivalent of oatmeal with toppings!dscn8303

Since I denied myself the PB&J I wanted for lunch I didn’t want to completely go without, so I make a smaller version for a snack. It’s nice to just eat what you want sometimes. This PB&PB was so satisfying and basically had the same calories as a bar. This is the beauty of eating real food over packaged stuff!dscn8306

When I got to Ben’s we took a walk to Ralph’s for a few food supplies and then made dinner.

I am a marketer’s dream because any time I see or hear a commercial for food I want it. I don’t know how many times I have said, “We should get that” after seeing a commercial for DQ. So it’s no surprise that after the most recent Hungry Girl email where she called the following frozen meal the best ever I wanted it.

Dinner: The new Kashi Mayan Harvest Bake. It has so many of my favorite foods – sweet potato, polenta, kale, black beans! It’s like they asked me what I like and put it all in a bowl together! Oh, and I had some crappy brussels on the side. They were from TJ’s and it said you can cook them in the bag, what it didn’t say is that makes them taste like crap. I made myself eat 3 and decided I’m going to try and roast them tomorrow…dscn8316

It was good, but didn’t live up to all the hype. I think I had crazy high expectations for it. I would probably get it again, but I have at least 5 other frozen meals that I prefer (Kashi, Amy’s and LC). dscn8310

I also had some TJ’s Flax chips and guac while cooking for Ben. And unpictured bites of the pasta I made him. Darn, I was doing so good! I need to stop eating any food that is not my meal or snack specifically. New rule.

Now I am done eating for the day and am going to relax 🙂 No eating after dinner – it’s the New May Challenge (along with Crap Free of course)!

    The Kashi Mayan thing is my favorite one!!! I also like the black bean and mango one.

    Good luck with the challenge – it’s a tough one! I’d encourage you to allow yourself a healthy snack (like a piece of fruit), otherwise it’s so all or nothing.

    Sweet potato, polenta and black beans? That sounds delish…we dont have the Kashi frozen meals here so I may try to recreate that on my own.
