Meatless Monday– Guac is Calling My Name

Mexican Meatless Monday came early today. Normally I do it for dinner, but there was guacamole in my fridge calling my name. It would have been rude of me not to answer. IMG_6217 (800x600)

I made a big ol’ egg scramble and put it on top of lettuce. Add some beans, guac and a tortilla and you’ve got yourself a meatless meal that will actually keep you full for 16 minutes. (But only if you use a pound of guacamole.)IMG_6218 (800x600)

In other news, I’m going through seltzer like it’s water. Wait. Nevermind…IMG_6229 (600x800)

Okay, that wasn’t really a Meatless recipe. I.O.U. I’ll make a new recipe next week, promise!

    I just looked at the recipe for sweet potato samosa pie and god that looks good. I swore off orange foods because my skin turned orange from too much pumpkin, but I may have to make an exception for that pie!

    I’m glad somebody else is obsessed with TJ’s fizzy water! Try the plain kind with a splash of limeade – I swear you will not be disappointed!
