Hello and welcome to another glorious round of Mexican Meatless Monday!

Unfortunately, because of the craziness of my first week back to work I was not able to create the recipe or post I had planned. Boo.

But, I do have a few Mexican Meatless favorites to share with you. These are a handful of my favorite products…

TJ’s favorite Spicy Ranchero Egg White salad. They don’t always have this at Trader Joes, but when they do it ends up in my cart!

Soyrizo – I swear this can replace “real” chorizo in any meat-eater’s life. soyrizo

Ranchero Queso Fresco– the.best.cheese. for corn tortilla quesadillas, or sprinkled on just about anything.ranchero

Next week Mexican Meatless Monday will once again feature something I cooked. But, until then you can enjoy these goods.

    Everything looks drool-worthy. Except for the cheese, maybe. But that’s only because I’m only sometimes in the mood for cheese.

    I love love love Amy’s mexican meatless bowls! I think the enchilada with salsa verde and the black bean enchilada with cheese are both very good! Nom nom nom. In fact, I don’t think I’ve ever encountered an Amy’s product I didn’t like.

    No Chilaquiles I see. Oh well, I learned about a new product I have never tried – TJ’s Spicy Ranchero Egg White Salad. Sounds like something I would love. Thanks for sharing! My coworker used to always make that Amy’s Bowl and she would add half a sliced avocado on top. It always looked amazing.
